Vegan Chili
For my chili dogs and nachos
Chili recipe | Vegetarian | Episode 29
Enjoy this warm and spicy chili on a cold evening!
Ingredients:
Mixed beans - 3 cups
Tomatoe puree - 2 cups
Onion - 1 cup
Carrots, peppers - as needed
Vegetable stock - 1 cup
Chilli powder - 1 tsp
Paprika - 1 tsp
Cumin powder - 1 tsp
Oregano - 1/2 tsp
Hing/ asafoetida - a pinch
Garlic powder - 1/2 tsp
Salt - as needed
Olive oil - 2 tsp
Green chillies - 2
Toppings:
Avocado - few slices
Tortilla chips - as needed
Green onion - as needed
Lime juice - as needed
Detailed steps:
1. In a large heated pot, add olive oil, green chillies, onions and salt and sauté for few minutes
2. Add capsicum and carrot and cook for few minutes
3. Add all your spice powders and cook in low heat for few seconds and then add tomato puree
4. Cook until tomato puree cooks and raw flavor of spices is gone almost
5. Add vegetable stock, beans and water and cook well for many hours (if possible) or at least 45 minutes-60 minutes
6. Serve with your favorite topping

LEARN HOW TO MAKE CHINESE CHILI GREEN BEAN STIR FRY RECIPE
LAY HO MA!! This recipe is definitely a childhood favourite - it's crunchy, salt, spicy, and just all kinds of deliciousness. Join me in this episode and learn how to turn those humble green beans into this amazing dish with this Chinese chili green beans stir fry recipe! Let's begin.
Ingredients:
1/2 lb green beans
3 pieces garlic
1 large shallot
2 tbsp soy sauce
1 tsp rice vinegar
1 tbsp hosin sauce
2 tbsp chili oil (
2 dried chili peppers
Directions:
1. Bring a pot of water to boil for the beans
2. Finely slice the garlic and shallot
3. Mix together the soy sauce, rice vinegar, and hosin sauce
4. When the water comes to a boil, blanch the beans for 3-4min
5. Strain out the water from the beans
6. Heat up a sauté pan to medium heat. Add the chili oil
7. Sauté the shallot and garlic for about 1min. Then, add the green beans and sauté for 4-5min
8. Add the dried chili peppers followed by the sauce and a dash of water
9. Sauté for another few minutes until the sauce has been absorbed

Get 5 of your 5 a day with this tasty, nutritious vegan chili recipe. A hearty stew of fresh vegetables, packed with sweet tomatoes and kidney beans which is rich in protein. Finish with a dash of yoghurt (if you'd prefer the vegetarian option!), avocadoes and serve with (brown) rice.

The following ingredients is for 8 servings
3 Bell Peppers
3 Medium Sized Onions
2 Big Gloves of Garlic
2 Tins of Kidney Beans
2 Tins of Plum Tomatoes
Coriander (Substitute: Basil + Parsley)
Red & Green Chili Peppers (3 Each)
Fresh Peppers (To Taste)
Cinnamon, Cumin, Curry, Thyme, Salt (To taste)
Plain Natural or Greek Yoghurt (Optional)
Avocadoes (Optional)
Method
• Heat oil for about a minute, throw in 3 diced Onions. Stir for about 2 minutes till translucent.
• Put in 1 glove of garlic, about 2 tbsp. of cinnamon, 1tbsp. of Cumin, 1.5tbsp. of cayenne pepper. Stir on low heat
• Put in 2.5 of your 3 bell peppers (Rest will be put in at the end) add Fresh Pepper, chili peppers, ginger, thyme, curry and salt to taste then stir (You can be light handed on the seasoning here, when you taste at the end you can top up)
• Stir in your coriander (Basil & Parsley were used as a substitute here) till it wilts
• Stir in both the tomatoes and kidney beans (2 tins each)
• Cover for 20 minutes on low heat
• After 20 minutes, stir and taste for seasoning. Top up on whatever you would like.
• This dish was served with brown rice, yoghurt and avocadoes
• This dish could be served with potatoes, yams, plantain, tortillas
