How To make Mother's Scotch Shortbread (Christmas)
2 c Flour
1/4 ts Salt
1/4 ts Baking powder
1/2 c Powdered sugar
1 c Butter
Oven 325~. Mix butter and sugar until creamy. Add sifted dry ingredients. Chill until easy to handle. Roll out to 1/4" thickness on lightly-floured board or wax paper.
Cut into desired shapes (I have a bird cutter and Christmas tree). Bake on ungreased sheet at 325~ for 10 to 15 minutes. Cookies may be sprinkled with
colored sugars before baking, if desired.

Super Simple Rainbow Shortbread Bites
These little cookie bites are always a HIT at parties!
Shortbread Bites Recipe:
1/2 cup butter, room temperature
1/4 cup sugar
1/4 tsp almond or vanilla extract
1 1/4 cup All Purpose flour
1/4 tsp salt
4 tsp sprinkles
-Heat oven to 325 degrees
-Combine butter, sugar and almond or vanilla extract
-Beat at medium speed until creamy
-Reduce speed to low, add flour & salt. Beat until well
mixed. Stir in sprinkles
-Knead mixture 4-5 times in bowl until dough forms a ball.
-Pat dough evenly onto cutting board (I covered mine in plastic wrap to make things easier/cleaner!)
-Cut dough into small squares
-Place squares 1/2 inch apart on an ungreased
cookie sheet. Bake approximately 15 minutes or until
bottoms are a golden brown.

Shug's Mom's Short Bread Demo ♧
Shortbread time at our home. I make it for friends and family....passing on my Mom's Tradition. She made me stand by her side to learn to make it. Now I channel her every Christmas as I make loads of it. It is a bit labor intensive but our favorite Christmas Dee-Light.
4 cups all-pupose flour
1 pound butter
2 tablespoons of ground almonds...I use my coffee grinder.
1 cup granulated sugar

At the time of this visit to Scone in Scotland, Victoria had been married to Albert for two years and had given birth to her first two children Princess Victoria and Prince Albert Edward.
Amazingly their host, the Earl of Mansfield, who had been planning the trip for two years, had problems with cowboy builders along the way, and ended up with just 12 hours to impress the queen.
This visit was part of a charm offensive the queen made to improve the monarchy's standing in Scotland. Scone was chosen partly for its symbolic place in Scottish history and also because for centuries Scottish kings were crowned here on the Stone of Scone. Tim reveals a mystery surrounding the precise whereabouts of the original stone. It was supposedly moved to Westminster Abbey for the kings and queens of England (including Victoria) to be crowned upon - but was it?

BETH’S HOLIDAY SHORTBREAD COOKIE RECIPE
Makes 9 cookies

INGREDIENTS:
¾ cup (180 g) butter
½ cup (50 g) powdered sugar
1 tsp (5 ml) vanilla
¼ tsp (1.25 ml) salt
2 tsp (10 ml) orange zest
1 ½ (180g) cups flour

9x 9 Shortbread Pan.

METHOD:
Whip butter until fluffy, add sugar, beat to combine. Add vanilla, salt and orange zest. Beat together. Add flour. Beat until really well combined.
Roll into ball. Wrap in parchment or plastic. Refrigerate 1 hour.
Press into pan. Prick with a fork.
Bake at 325F (175C) 25-27 mins. Allow to cool for 15 mins.
Place cutting board on top of pan and flip over. Cut shortbread into squares while still warm.
