2 Cups Cooked Chicken (shredded)
1 lb. Spaghetti Pasta ( you can make this low carb with Zoodles or Hearts of Palm)
1 Tbsp. Olive Oil
2 Tbsp. Butter
1 Tsp. Garlic (minced)
1 Cup Sweet Onion (diced)
1 Medium Red Bell Pepper (diced)
1 Tsp. Garlic Powder
1 Tsp. Onion Powder
½ Tsp. Paprika
1 Tbsp. Italian Seasoning
1 Tsp. Salt
16 oz Velveeta Cheese Block (cubed)
8 oz Cream Cheese (cubed)
2 Cans Condensed Cream of Chicken Soup
1 Can Rotel (tomatoes and green chiles mild)
1/3 Cup Milk or Half and Half
1 ½ Cups Sharp Cheddar Cheese (shredded)
2 Tbsp. Parmesan Cheese (grated)
1 Tbsp. Parsley

CHICKEN SPAGHETTI CASSEROLE RECIPE:
1 cooked, boned rotisserie chicken ( I used 1 1/2 chicken breasts)
1/2 c. celery (minced)
1/2 c. onion (minced)
1/4 c. bell pepper (minced)
1/4 cup red bell pepper (minced)
2 tbsp. olive oil
Sm. jar pimientos or 1/3 cup marinated mushrooms (if using mushrooms use some of the juice)
1 can mushroom soup
1 can cream of chicken soup
1 tsp. ground black pepper
1 pound package spaghetti, cooked and cut into 4 inch lengths
1/2 c. Parmesan cheese
1 cup shredded low fat Mozzarella cheese
Sauté celery, onions, and bell pepper in olive oil. Add soups, pimiento (if using) in a bowl and black mix well.
Place 1/2 spaghetti in casserole dish. Add the chicken & mushrooms and spread 1/2 of soup mixture over this. Cover with 1/2 cup of parmesan cheese. Bake at 350 degrees for 1 hour. Serves

Monterey Chicken Casserole

Ingredients:
2 lbs. Cooked Chicken (pulled)
1/2 cup Sour Cream
4 cups Salsa
5 cups Crushed Tortilla Chips
2 cups Shredded Monterey Jack Cheese
1 Sliced Jalapeño Pepper (optional)
Instructions:
Preheat oven to 350º F.
In a large bowl, combine chicken, sour cream, salsa, and half of cheese.
Add half of tortilla chips to bottom of greased 13 x 9 inch baking dish.
Pour meat mixture on top of chips.
Bake for 25 minutes.
Top with remaining chips, cheese, and optionally garnish with peppers.
Bake for an additional 10 minutes to heat through.

• 8 ounces spaghetti
• 2 tablespoons butter
• 1 medium white onion, diced
• 1 green bell pepper, diced
• 2 cloves garlic, minced
• ¼ cup all-purpose flour
• 2 cups milk
• 3 cups shredded cheddar cheese, divided
• 15 ounces canned diced tomatoes, drained
• 4 ounces canned diced green chiles, drained
• 2 cups cooked diced chicken
• ½ teaspoon salt
• ½ teaspoon black pepper

1️⃣ 00:29 - Preheat oven to 350 degrees. Cook spaghetti in a saucepan according to package directions.
2️⃣ 00:45 - Meanwhile, melt butter in a large pot over medium-high heat. Add in onion and bell pepper and cook until softened, about 5-7 minutes.
3️⃣ 01:08 - Add in garlic and flour and continue to cook 2 more minutes. Slowly stir in milk and bring to a simmer until thickened. Once the sauce thickens, immediately remove from heat.
4️⃣ 01:35 - Stir in 2 cups cheddar cheese until melted and smooth. Then stir in diced tomatoes, diced green chilis, diced cooked chicken, and drained spaghetti. Season with salt and pepper to taste.
5️⃣ 02:10 - Pour pasta into a lightly greased 9x13 pan. Top with remaining 1 cup cheddar cheese. Bake in the preheated oven for 25 to 30 minutes until cheese is warm and bubbly and starting to brown.
