In this episode of In The Kitchen With Matt, I will show you how to make Monster cookies. This homemade monster cookies recipe is awesome! Monster cookies are kind of a mashup or mix between several cookies, kind of like Frankensteins monster, haha. If you like chocolate chip cookies and peanut butter oatmeal cookies, and if you like M&Ms, you will love these. They are easy to make, if I can do it, you can do it. Let's get baking!

1 1/4 cups oats, use old-fashioned not quick oats. (135g)
1 cup all-purpose flour (120g)
1 tsp. baking soda (5g)
1/2 tsp. salt (2g)
1/2 cup softened room temp butter, unsalted or salted (113g)
3/4 cup brown sugar light or dark (200g)
1/4 cup white granulated sugar (50g)
1 large egg
1 tsp. vanilla extract (5ml)
1/2 cup peanut butter (120g)
1/2 cup chocolate chips, semi-sweet, milk chocolate, dark, white (85g)
3/4 cup M&Ms (85g)
1/4 cup chopped nuts, peanuts, walnuts, pecans, etc. (37g)

1 cup creamy peanut butter (I used JIF)
3/4 cup light brown sugar, packed
1/4 cup granulated sugar
2 teaspoons vanilla extract
3/4 cup old fashioned oats (use gluten-free oats for GF option)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup Mini M&Ms (use DF M&Ms to make them dairy free)
1/2 cup mini semisweet chocolate chips (option to use dairy free)

1/2 Cup Butter Room Temperature
1 Cup Brown Sugar
1/2 Cup Creamy Peanut Butter
1 Large Egg
2 tsp Vanilla Extract
3/4 Cup Flour
1 tsp Baking Soda
1 tsp Cornstarch
1/4 tsp Baking Powder
1/4 tsp Salt
1 1/4 Cup Old Fashioned Oats
1 Cup Semi-Sweet Chocolate Chips
1 Cup Mini M&Ms
Bake at 170°C for 11-13 mins or until slightly brown at the edges

INGREDIENTS
1 box vanilla cake mix
6 tbsp. melted butter
2 large eggs
1/3 c. powdered sugar
1 tsp. pure vanilla extract
Food dye in 3 colors (like green, blue, and pink)
1/2 c. granulated sugar
Candy eyeballs
DIRECTIONS
1. Preheat oven to 325°. Line two large baking sheets with parchment paper. In a large bowl, combine cake mix, melted butter, eggs, powdered sugar and vanilla and stir until combined.
2. Divide dough between 3 bowls and dye each bowl a different color. (We used green, blue and pink.) Roll dough into tablespoon-sized balls then roll balls in the sugar.
3. Place about 2” apart on the baking sheet and bake until tops have cracked and the tops look set, 8 to 10 minutes.
4. Immediately, while the cookies are still warm, stick candy eyeballs all over the cookies. Let cool completely before serving.

Ingredients
10 Tablespoons unsalted butter softened to room temperature 141g
2/3 cup light or dark brown sugar tightly packed, 135g
1/4 cup sugar 50g
1/2 cup creamy peanut butter I don't recommend using natural peanut butter 140g
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour 125g
1 teaspoon cornstarch
3/4 teaspoon baking soda
3/4 teaspoon salt
1 cup quick oats 115g
1/3 cup butterscotch chips 60g
1/3 cup semisweet chips 60g
1/2 cups M&M candies 100g
Instructions
00:00 Introduction
00:24 Combine butter, sugars, and peanut butter in the bowl of a stand mixer (or in a large bowl and use an electric mixer) and beat until creamy and well-combined.
01:01 Add eggs and vanilla extract and stir well.
01:14 In a separate bowl, whisk together flour, cornstarch, baking soda, and salt.
01:34 Add your flour mixture to your wet ingredients and stir (with mixer on low speed so that you don't send flour flying everywhere!) until flour is completely incorporated into the batter. Be sure to scrape the sides and bottom of the bowl so that ingredients are well-combined.
01:55 Add oats, as well as other add-ins and stir well.
02:22 Cover cookie dough with plastic wrap and transfer to the refrigerator. Allow dough to chill for at least 30 minutes (this dough may be chilled longer or even overnight if needed).
02:33 15 minutes before dough is finished chilling, preheat your oven to 350F (175C) and line cookie sheet with parchment paper.
02:41 Once dough has chilled, remove from the refrigerator and roll into 1 1/2 Tablespoon-sized balls and place on prepared cookie sheet, spacing cookie dough at least 2 apart.
03:05 Bake on 350F (175C) for 11-12 minutes or until edges are beginning to turn light golden brown. Allow cookies to cool completely on baking sheet before enjoying.
