The Secret to Making the Best Tomato Pie Around
The first time I tried tomato pie was at a little restaurant just a town over, and I became obsessed with it. Every time I was out for lunch, the cafe was my destination where I tried to finagle the recipe from the wait staff
But really, that wasn't going to happen, so I started tweaking different recipes and came up with this version that is as goo - or better! - than the original that won me over at first bite. I think you're going to love this!
Ingredient List:
Pie crust – Blind bake 350 until light brown
4 lg. tomatoes peeled and sliced 10 fresh basil leaves, chopped, or 2 T dried 2 T fresh thyme, chopped, or 1T dried 1/2c. chopped green onion
½ - 3/4c. mayo 1/4c. sour cream
1c. shredded cheddar 1c. shredded mozzarella 1/2c. Shredded Parmesan Salt and pepper

-I've been wanting to make this for a while. I'm glad I did! This is really tasty and would be even better with some vine ripened tomatoes.
Ingredients: - Pre-made or homemade pie crust. Here's a link to my simple pie crust and Mom's Mom's: Mine: - 2 cups shredded mozzarella cheese - 1 cup shredded sharp cheddar cheese - 1/2 cup grated parmesan cheese - 4 tomatoes cut in 1/4 inch thick slices (you can opt to peel them first). Here's a link to how Mom peeled them: - 1/2 cup mayonnaise - 2 tablespoons all purpose flour - 2 eggs - 2 tablespoons dried basil - 1 teaspoon of salt to sweat the tomatoes
Directions: 1. Heat oven to 350F and pre-cook your pie crust for 15 minutes. Take it out and let it cool. 2. Spread the tomato slices out on a paper towel and sprinkle salt over them to sweat them. Let them sit for 20 minutes, then dab them dry with a paper towel. 3. Line bottom of pie crust with the mozzarella cheese. Spread the cheese out evenly all the way to the edge of the pie crust. Evenly sprinkle parmesan cheese over the top. 4. Lay the tomato slices evenly in the pie crust. Sprinkle the top with the dried basil. 5. In a separate bowl, mix the mayo and flour together. Add the eggs and mix until smooth. Stir in the cheddar cheese and any additional mozzarella cheese you'd like. Spread the mixture evenly over the tomatoes. 6. Cook at 350F for 35-40 minutes. Let cool 30 minutes to let it set before serving.
