How To make Mom's Cinnamon Rolls
12 c Flour, all purpose
3/4 c Margarine
3 c Water
1 c Sugar
3 pk Yeast
1 1/2 tb Salt
3 Eggs
Brown Sugar 2 Sticks of Butter
These rolls have alot of layers due to how thin the dough is rolled out. Mrs. Schmidt says that beating the ingredients a real lot is what makes this come out well. There is also a trick to getting the sprinkled water just right, just a few drops, here and there. Sprinkle yeast in 3 cups of warm water with 1 tbsp. sugar, mix and let sit 10 min. Add 3 cups of flour and beat well with beater. Let rise until spongy (30 min.) Beat 3 eggs really well, 5 minutes (Frothy & Fluffy). Soften margarine and add 1 cup sugar and beat really, really well till very creamy. Add to eggs and beat till very well blended and add salt. Add egg mixture to sponge mixture. Add approximately four to 5 cups flour and beat with a beater really well till smooth. Continue adding flour until smooth to stir put the rest of the flour on a board and put the dough in the middle and knead. (You don't have to knead in all the flour-only until not sticky and easy to handle. Put the dough in a warm oven and cover with a damp cloth. Let rise until doubled (about 1 hour.) Fix pans for Rolls. Grease 2 large rectangular baking pans with margarine. Sprinkle liberally (not packed) (1/4" deep) with brown sugar and dot liberally with butter (1 stick per pan) Sprinkle very lightly with water to keep the sugar from burning and sticking. Punch down dough and let rise 1/2 hour more. Turn out and take 1/2 of the dough and roll out to 1/2" thick rectangle. Spread with soft butter (over all of rectangle) and sprinkle with sugar and cinnamon. Roll up jelly roll style, pulling to stretch dough while rolling. Cut roll into 1" thick slices. Place in pan-just touching (don't crowd) let rise (covered with a damp cloth) until above the pans. Bake at 325-350 for 20-25 min. -----

Mom's Cinnamon Roll Recipe :: Vlogmas 2020 Day 3
This is the long-awaited cinnamon roll recipe!! I'll put the recipe down below.
3 cups whole milk
1 cup sugar
4 sticks butter, reserve two for later (when you melt the butter to go inside the cinnamon rolls)
6 large eggs
12 cups bread flour
3 Tbs yeast (not instant)
1 Tbs salt
3/4 cup water
nutmeg
Cinnamon sugar for filling (Use your best judgement)
1. Scald 3 cups whole milk in pot on stove. Don't boil but look for about 200F using a thermometer.
2. Remove hot milk from heat and add sugar and 2 sticks butter
3. Spray bowl and dough hook attachment of kitchen aid mixer with cooking spray and pour in milk mixture. Begin to mix on low to drop heat below 120F.
4. When temperature is approximately 120F, add in 6 eggs, still mixing in the kitchen aid. Yolks may not break and that is okay. They will begin to break when the flour is added.
5. Slowly add in part of the flour and 3 Tbs yeast. Allow yeast to combine thoroughly and follow with more flour. When yeast is completely incorporated, add in salt and water. Finish with the rest of the flour.
6. Continue to mix until dough begins to creep up the dough hook.
7. Lightly dust a large bowl with flour and place the dough into the bowl. Sprinkle the top with more flour, cover with plastic wrap or a tea towel and set in a warm place. Allow dough to double in size.
8. When dough has doubled in size, punch down and knead to combine residual flour. Divide in half and place one half on floured surface.
9. Shape dough into rectangle with hands, roll out with rolling pin. Try to keep the rectangular shape.
10. Cover dough with melted butter and cinnamon sugar.
11. Roll up the dough. It is easiest if you roll the dough toward you.
12. Cut the dough into the size of roll you would like. We cut approximately 3. Place rolls into greased pans. Allow to rise again, until they fill out the pan and look puffy.
13. Bake 350F 20-30 minutes.
Don't forget about the other half of the dough!
When the rolls come out of the oven, we like to brush them with butter. You could make an icing or frosting for them, but we don't think they need this.

How to Make Homemade Cinnamon Rolls | Perfect Recipe
Here I show you my best way to make delicious cinnamon rolls! These cinnamon rolls have the perfect crispy outside with a soft inside. The recipe:
Dough:
1/2 cup milk (4 oz. or 120 mL)
1/2 cup heavy cream (4 oz. or 120 mL - may substitute milk)
1 Tablespoon yeast (10 grams)
2 Tablespoons sugar (25 grams - I accidentally said teaspoons in the video)
1 teaspoon salt (5 g)
4 Tablespoons salted butter (56 grams)
1 egg
3-4 cups AP flour (360-480 g)
Filling:
1/2 cup salted butter (113 g)
1 cup brown sugar (213 g)
2-3 tablespoons cinnamon to taste (30-45 g)
Glaze:
4 oz. cream cheese
4 tablespoons salted butter (56 g)
1 1/2 - 2 1/2 cups powdered sugar (170-285 g)
1 teaspoon vanilla (5 g)
2-3 tablespoons milk (30-45 g/mL)
IMPORTANT! I ended up baking around 20-24 minutes at 325° F (163° C) In the video I said 14-18 minutes but I must have made them extra thick and gooey this time.???? just keep watching them until they are light golden brown. Happy baking’
