How To make Moist Spiced Apple Scones
2 c All-purpose flour
1/2 c Brown sugar, packed
2 ts Baking powder
1/2 ts Ground cinnamon
1/4 ts Ground nutmeg
1/4 ts Ground ginger
1/8 ts Salt
2 tb Butter or margarine
1 c Dried apples; chopped
1/2 c Unsweetened applesauce
1/4 c Buttermilk
1 Egg
Topping: 1 ts Granulated sugar
1/8 ts Ground cinnamon
Recipe by: Pillsbury, Healthy Baking Preheat oven to 375 degrees; spray a large cookie sheet with nonstick cooking spray. In a medium bowl, combine the flour, brown sugar, baking powder, cinnamon, nutmeg, ginger and salt; mix well. Using a pastry blender or fork, cut in the margarine until the mixture resembles coarse crumbs. Stir in the apples. In a small bowl, combine the applesauce, buttermilk and egg; mix well. Add to hte dry ingredients; stir just until moistened. The dough will be sticky. Place the dough on the cookie sheet. With wet fingers, shape it into an 8-inch circle about 3/4-inch thick. In a small bowl, combine sugar and cinnamon; sprinkle over the top of the dough. With a sharp knife, score the top surface into 8 wedges, cutting about 1/4-inch deep. Bake for 18 to 22 minutes, or until golden brown and a toothpick inserted in the center comes out clean. Cut into wedges. Serve warm. Penny Halsey (ATBN65B). These Spiced Cinnamony Apple Scones are just perfect to use the apple bounty. They are also low-fat with no added oil and no full fat coconut milk! And yes, they are still crisp and biscuity!!
I usually use full fat coconut milk for scones when making the without oil/butter and that works out really well. It is not low fat however, so I decided to experiment with other options. The 2 things tot make a good low fat scone are 1. do all possible things to keep the moisture from baking out, which can result in dry scones, 2. Chilling at several points for the biscuit like texture rather than cake or muffin texture.
In these scones, I use almond milk and apple sauce as the wet ingredients, which are frozen until some portions of the mix freezes. This mix is used to make the scone dough. The thinly sliced apples are tossed in maple syrup to keep a barrier between the apple moisture and the scone dough. The dough is topped with a liberal dusting of cinnamon and sugar. This helps seal in some of the moisture during baking. The shaped scones are chilled again before baking for a nice crisp crumb.

377g (2 1/2 cups scooped and leveled) all-purpose flour
75g (1/3 cup) granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
113g (1/2 cup) cold, diced butter (salted or unsalted, your choice)
94g (about 1 cup) peeled, diced apple (I used the 'Gala' variety)
50g (about 1/2 cup) chopped, frozen cranberries
225ml (1 cup) heavy cream
1/2 teaspoon pure vanilla extract
Optional garnish: a dusting of granulated sugar
Apple Cinnamon Scones
I spent a good part of my childhood in Germany where I fell in love with baked goods. There is nothing better than walking into a bakery at 6am and smelling the fresh scent of bread, cookies, croissants and scones.
Over the years, I have tried scones from many different bakeries, but they never quite tasted the same. This is where my scone journey began. I didn't know how deep down the rabbit hole I would go, but I think it is safe to say, my family and friends are all scone lovers now due to the large volume they have tried over the past few months.
Along this journey, I also discovered why it is so hard to recreate a dish your grandmother makes, even when you have her recipe card. I took a simple recipe I found on the internet and made it my own. I believe no baked good can be called a baked good if it doesn't have pure vanilla extract in it. This is something I learned from my mother. No matter what the recipe says, you always need at least 1 teaspoon of vanilla. Also, I prefer heavy whipping cream to just milk, and why shred your apples when you can have nice apple chunks. Of course, my recipe card does not have any of this information on it, it is all stored in my head - good luck future grandchildren!

Delicious & Quick Fluffy Apple Cake / Easy Recipe
This easy apple cake is a delicious dessert that's perfect for any occasion. The cake has a light and fluffy texture and is infused with the sweet and tangy flavors of apples and lemon juice. The cake batter is made with a combination of eggs, sugar, yogurt, milk, sunflower oil, and vanilla extract. This creates a moist and tender crumb that is perfectly complemented by the sweet and slightly tart apple slices.
To make the cake, you'll need 2 apples, which you'll need to peel and slice into thin pieces.In a pan, melt 25 grams of butter and add apple slices, add 15 grams of lemon juice and 20 grams of sugar. Cook the apple slices in the mixture until they soften a little.
Next, prepare a cake batter by whisking 2 eggs with 130g of sugar, adding 60g of yogurt, 60ml of milk, 60ml of sunflower oil, and a dash of vanilla extract to the egg mixture and whisk until well combined. Sift 200g of flour and 8g of baking powder into the mixture and gently fold until the batter is smooth.
Pour the cake batter into a greased 18cm cake pan and arrange the cooked apple slices on top.
Bake the cake in a preheated oven at 180°C for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Once the cake is done, let it cool in the pan for 10-15 minutes before removing it from the pan and placing it on a wire rack to cool completely. If you like, you can grill the cake for an additional 2 minutes until the top is golden brown. This apple cake is a crowd-pleaser and is sure to become a family favorite!
