How To make Modified General Tao's Chicken
10 oz Chicken Legs, deboned, or
-thighs, deboned, or -boneless chicken breasts 2 c Soya Oil
Water chestnut flour(Powder) -to coat chicken pieces
SEASONINGS (MIX IN BOWL:
1 tb Ginger Root, minced
2 Scallions, chopped
1 tb Garlic, minced
2 Thai finger peppers, crushed
-use more or less to taste 1 tb Orange or lemon peel, minced
SAUCE (MIX IN BOWL:
2 tb Sugar
2 tb Soy Sauce
1 1/2 t Vinegar
2 tb Cornstarch
1/4 c Chicken Stock
1 t Sesame Oil
MARINADE:
1 ea Egg White
1 tb Cornstarch
1 tb Soy Sauce
Cut the chicken into pieces no larger than 1" square. Prepare marinade by combining egg white, cornstarch, and 1 tablespoon soy sauce in a large bowl. Add chicken pieces and set aside for two hours. In a deep pot, heat the oil until it reaches 350 degrees. Dredge marinated chicken pieces in water chestnut powder to coat. In a basket, or with a slotted spoon, lower several marinated chicken pieces into the fat. Fry about one or two minutes or until the chicken becomes crisp; test for doneness before completing the batch. Continue until all pieces have been fried. Set oil and cooked chicken pieces aside. In a wok, on high heat, reheat two tablespoons of the reserved oil. Add prepared ginger, scallions, garlic, chili peppers, and orange or lemon peel. Stir to prevent burning. Add the fried chicken and stir quickly.Add sugar, soy sauce, vinegar and cornstarch mixed with chicken stock. Remove from the heat and stir sesame oil into the sauce. Spoon the mixture on to a hot platter and serve immediately with steamed rice. Serves 4.

TAIPEI, TAIWAN - Welcome to Taiwan and today is special because we are going to eat the original recipe for General Tso’s Chicken - a Chinese Hunanese dish that’s had a significant impact on Chinese restaurants around the world!
The story all begins with Chef Peng Chang-kuei, originally from Hunan, China, who later moved to Taipei, Taiwan. He came up with the recipe for General Tso’s Chicken on the spur of the moment when he was cooking for United States Navy Admiral Arthur Radford and other officers.
Today it remains one of the standard Chinese dishes that you’ll find in nearly all Chinese and Chinese American fast food restaurants and take outs. Few other dishes have such an incredible story and impact!

Ingredients for:
1) General Tso’s Recipe :
- Chicken Thighs – 500 Grams
- Rice Vinegar – 1 Tablespoon
- Soy Sauce – 1 Tablespoon
- Salt – ½ Teaspoon
- Egg – 1 Medium
- Corn Starch – ¼ Cup
- Flour – ¼ Cup
- Garlic & Ginger Mince – 1 Tablespoon
- Dried Chili – 5 to 6 (add more for extra hot)
2) General Tso’s Sauce:
- Chicken Stock – ¼ Cup
- Rice Vinegar – 2 Tablespoon
- Soy Sauce – 2 Tablespoon
- Oyster Sauce– 1 Tablespoon
- Chili Sauce – 1 Tablespoon
- Brown Sugar - 2 Tablespoon
- Corn Starch – 1 Tablespoon
3) Optional:
- Spring Onions for Garnish
- Sesame Seeds for Garnish
General Tso’s Preparation:
- On a chopping board, cut the chicken thighs into small cubes.
- For the marination, add the rice vinegar, soy sauce, salt, egg, corn starch, flour, and mix well to coat all the chicken pieces.
- Set aside and let rest for 30 minutes
- Prepare the general Tso's sauce by mixing well the chicken stock, rice vinegar, soy sauce, oyster sauce, chili sauce, brown sugar, and corn starch.
- Preheat a saucepan with cooking oil and fry the chicken at 190C until golden brown. Remove and let rest on a cooling rack.
- Preheat a pan with olive oil and add the garlic and ginger mince. Pour over the prepared general Tso's sauce.
- Let cook until reaching a simmer.
- Add the dried chillies and cook until thickened and reduced.
- Add the chicken and mix well to coat every piece.
- Serve with rice and finish with spring onion and sesame seeds.

Bravado Spice Makes Spicy General Tso's Chicken with Aka Miso Ghost Reaper!

General Tso's chicken is a Chinese American restaurant staple, but it's easy to make at home! Try this extra spicy version made with Bravado Spice's Aka Miso Ghost Reaper Hot Sauce as seen on First We Feast's Hot Ones with Sean Evans.

Ingredients:
2-3 lbs Boneless cubed chicken
2 Tbsp Corn starch
1/4 c All purpose flour
4 c Vegetable oil
1 tsp Bravado Spice Aka Miso Ghost Reaper Sauce
1/2 c Water
2 tsp Minced garlic
2 tsp Minced ginger
1/4 c Soy Sauce
1/4 c Unpacked brown sugar
1/4 c Rice wine vinegar
2 Tbsp Broth
1 tsp ea. Salt & pepper
- Dried japones (Santaka) or arbol chiles
- Sesame seeds (optional)
Steps:
1. In a bowl, mix the cubed chicken, salt, pepper, corn starch, and 1/2 c water. Mix well. You may need a little more water if the batter is too dry.
2. In a large wok or deep pan, heat the vegetable oil to 350°F and fry the chicken until golden brown. You may need to fry in 2-3 batches.
3. Drain the pot of almost all but about 1 Tbsp of oil, and add the minced garlic and ginger. Cook for about a minute over medium heat until the garlic just begins to brown, then add the soy sauce, sugar, rice wine vinegar, japones chiles, broth and Bravado Spice Aka Miso Ghost Reaper Hot Sauce.
4. In a small bowl, mix about 1 Tbsp of cool water and 1/4 tsp of corn starch to make a slurry. When completely mixed, add to the pot.
5. Add the fried chicken pieces and toss well until evenly coated. Serve immediately over rice or steamed broccoli and top with optional sesame seeds or sliced chives.
