How To make Mint Iced Brownies
brOWNIE LAYER 1/2 c Butter or margarine
1 c Sugar
2 Eggs
1 t Vanilla
2 1-oz Squares unsweetened
Chocolate 1/2 c Finely chopped pecans
1/2 c Flour -- sifted
MINT LAYER 4 tb Butter or margarine
1 1/2 c Powdered sugar
3 tb Evaporated milk
1 t Peppermint flavoring
1 sm Drop green coloring
CHOCOLATE ICING 4 oz Semisweet chocolate
1 tb Butter or margarine
brOWNIE LAYER: Cream soft butter with sugar. Add eggs one at a time and mix until creamy. Stir in vanilla and nuts. Gradually stir in flour; being careful not to overmix. In microwave, melt chocolate 2-3 minutes in small glass measuring cup, stirring after 1 1/2 minutes. Stir chocolate into batter evenly. Pour batter into greased 8-inch square casserole. Spread evenly. Cook 7-8 minutes on high, rotating after 3 minutes. Allow
to cool. MINT LAYER: Cream butter and sugar. Add milk and blend until creamy. Add flavoring and enough color to be light green. Carefully spread over cooled brownies, evenly. Allow mint layer to "firm up" before adding chocolate layer. CHOCOLATE LAYER: Melt in glass measure cup for 2-3 minutes. Stir after 1 minute. Allow to cool and spread over firm mint layer. Spread carefully so mint and brownie layers are not disturbed. allow to stand several hours. Cut into squares to serve. I usually bake a 9 X 13 pan of brownies from a mix! This week's tutorial is on a flavoursome chocolate brownie infused with fresh mint... because who doesn't love mint chocolate? A super quick and fun recipe with some fabulously tasty results. You can experiment with loads of different flavours in this recipe, add chopped pieces of your favourite nut or citrus zest (orange chocolate brownies are also a winner!). I made these for my dad for Father's Day and it reminded me that to gift something handmade AND EDIBLE is one of the best gifts of all! So next time you bake, have that special person in mind and remind them just how much you love them.
INGREDIENTS TO MAKE 15 (APPROX. - 8/20CM TIN)
200g dark chocolate (the higher cocoa content the better)
200g soft baking butter
3 large eggs
250g light soft brown sugar
100g plain flour
1 tsp baking powder
14g chopped mint leaves

Chocolate Mint Brownies
It’s beginning to look a lot like Christmas – and these mint chocolate brownies are the perfect festive treat for the holidays – or any time you want a rich, chocolatey pick-me-up.
Chocolate Mint Brownies
Ingredients (Serves 8-10):
1 cup macadamia nuts
¼ cup fresh mint
¼ tsp sea salt
¼ tsp baking soda
3 ounces bittersweet chocolate (at least 80%),
½ cup coconut oil,
2 tablespoons erythritol
1 ½ tsp coconut flour
3 large omega eggs
1 teaspoon peppermint extract
Instructions:
Preheat oven to 350. Grease an 8X8 inch baking dish with coconut oil, and set aside.
In a food processor pulse macadamia nuts, mint, salt, and baking soda until the texture of gravel
Pulse in chocolate and coconut oil until smooth (it will take a while)
Pulse in peppermint extract, erythritol, coconut flour, eggs, and stevia
Transfer mixture to the prepared baking dish, and bake for 20-30 minutes. Let cool completely before serving.
How to Make the Perfect Chocolate Mint Brownies!
These chocolate mint brownies are sooo good! I was worried the peppermint would overwhelm the entire brownie, but it didn't. Thankfully! This is a pretty delicious brownie all on it's own too. If you're not a big mint flavor person, you can totally leave out the mint frosting step and stick with just the brownie and the chocolate ganache. You don't have to keep the mint to have a great tasting brownie! If you're interested in making this, I will leave a link down below.

Ingredients:
Brownie Batter:
1 cup butter, softened
2 cups sugar
1/2 tsp vanilla extract
4 eggs
2/3 cup cocoa powder
1/2 tsp baking powder
1/2 tsp salt
1 1/2 cups flour (use 1/4 less if you live in a low altitude area)
Mint Buttercream:
1/2 cup butter, softened
2 1/2 cups powdered sugar
2 1/2 tsp half and half
1 tsp peppermint extract
3 drops of green gel food coloring
Chocolate Ganache:
1 1/2 cups chocolate chips
1/2 cup butter, melted
Directions:
Make the brownie batter: To a bowl, cream together the butter and sugar. Add in the vanilla extract and beat in 1 egg and a time, mixing well between each addition. Once everything is nice and mixed, add in all of the dry ingredients. Mix until combined.
To a 9X13 baking dish, spray with non-stick cooking spray and apply a sheet of parchment paper, leaving some hangover for easy removal. Evenly spread out the brownie batter. Into a preheated oven at 350 degrees for 30-35 minutes. Let the brownies completely cool (about 2 hours) before adding on the mint frosting. Warm brownies will melt the frosting.
Make the mint buttercream frosting: To a bowl, add in the butter, powdered sugar, half and half, peppermint extract and gel food coloring. Mix until combined. Spread the frosting over the completely cooled brownies.
Make the chocolate ganache: To make the chocolate topping, melt the butter and chocolate chips in a microwave safe bowl. Let the chocolate cool for just a minute before pouring onto the mint layer. I found it was easier to tilt the entire dish, letting gravity move the chocolate around coating the entire top.
Let the chocolate set for 1 hour before slicing. Enjoy!

Best Mint Brownies Recipe:
ANN’S BEST MINT BROWNIES
INGREDIENTS:
1 cup butter (2 sticks)
½ cup cocoa (best quality you can find – I use Callebut dutch process)
4 eggs
2 cups sugar
2 cups cake flour (can use regular flour with 1 T. cornstarch)
1 ½ tsp. baking powder
½ tsp. salt
1 tsp. vanilla
1 cup chopped walnuts (optional)
DIRECTIONS:
Melt butter in a medium saucepan. Add cocoa and mix well. Add remaining ingredients and mix well. Pour batter into parchment lined and vegetable sprayed 9x13 cake pan, and bake at 350 degrees for 25 minutes. Let cool, then ice with mint icing. Place into freezer for 5-10 minutes to stiffen the icing. Remove from freezer and carefully smooth on a layer of chocolate icing.
MINT ICING:
2 1/3 cups powdered sugar
1/3 cup Crisco shortening or butter
Dash salt
3 T. cold water
½ tsp. mint extract
1-2 drops green food coloring
Directions: Combine all ingredients except shortening/butter. Mix until smooth. Add butter/shortening and combine and beat until smooth and fluffy.
CHOCOLATE ICING:
2 1/3 cups powdered sugar
5 T. butter, softened
1 T. corn syrup
1 T. milk
1/3 cup cocoa powder
1 tsp. vanilla
