Mint Chocolate Brownies – Deliciously thick and fudgy chocolate brownies that are infused with peppermint, and topped with a minty green cheesecake swirl. The BEST brownies for mint chocolate lovers!

INGREDIENTS:
FOR THE BROWNIES
1 and 1/4 sticks (140g) unsalted butter
1 and 1/2 cups (300g) granulated sugar
3/4 cup (75g) cocoa powder
1/4 teaspoon salt
2 large eggs, cold
1 and 1/2 teaspoons peppermint extract
1/2 teaspoon vanilla extract
1/2 cup (60g) plain/all-purpose flour
1/2 cup (90g) chocolate chips
FOR THE CHEESECAKE SWIRL
4-oz (112g) cream cheese, softened
1/4 cup (50g) caster/granulated sugar
1 large egg
1/2 teaspoon peppermint extract
3 tablespoons (25g) plain/all-purpose flour
Green food colouring, optional

Mint Chocolate Chip Cheesecake Brownies
Here is what you'll need!
Servings: 12
INGREDIENTS
Cheesecake:
8 ounces cream cheese, softened
¼ cup sugar
1 egg
½ teaspoon mint extract
4 drops green food coloring
1 cup mini chocolate chips
Brownie:
½ cup flour
1 cup sugar
⅓ cup dark cocoa powder
½ teaspoon baking soda
½ cup butter, melted
2 eggs
PREPARATION
1. Preheat oven to 350°F/180°C
2. For the cheesecake, in a bowl, beat the cream cheese until smooth.
3. Add sugar, egg, mint extract, and food coloring, and beat until smooth.
4. Fold in the chocolate chips. Set aside.
5. For the brownie, in a separate bowl, whisk the dry ingredients until combined.
6. Add the butter and eggs, and beat until smooth.
7. To assemble, fill each cup of a standard, lined muffin tin half full of brownie, then half full of cheesecake mixture.
8. Bake 25 - 30 min.

INGREDIENTS
1 box brownie mix, plus ingredients called for on box
28 Andes candies, plus more for garnish
1/2 c. butter, softened
3 c. powdered sugar
1/2 tsp. mint extract
1/4 c. milk
3-4 drops green food coloring
1/2 c. mini chocolate chips
DIRECTIONS
1. Preheat oven to 350°. Line a 8-x-8” pan with parchment paper and grease with nonstick cooking spray.
2. Prepare brownie batter according to package instructions and pour into the prepared pan. Top brownie batter with an even layer of Andes candies. Bake until a toothpick inserted into the middle of a brownie comes out with only a few moist crumbs, about 45 minutes. Let cool completely.
3. Make frosting: In a large bowl using a hand mixer, beat butter until light and fluffy. Add powdered sugar, mint extract, milk and a few drops of food coloring. Beat until smooth, then fold in mini chocolate chips.
4. Spread frosting in an even, thick layer over the cooled brownies. Slice into squares. Top with chopped Andes candies.
