How To make Miniature Bacon Cheese Quiche
PAStrY SHELLS::
1 package cream cheese softened (3 oz.)
1/2 cup margarine :
softened
1 1/2 cups flour
FILLING::
8 ounces bacon cooked crisp,
:
crumbled 4 ounces Cheddar cheese finely shredded
4 ounces Swiss cheese :
finely shredded
1 small onion finely chopped
:
LIQUID FILLING:-- 1 cup half & half
3 eggs
1/4 teaspoon salt
1/8 teaspoon pepper
Pastry shells: Combine ingredients and shape into 1 inch balls. Place into ligh tly greased miniature muffin pans (1 3/4 inch) forms into shells and prick with fork. Bake at 400 degrees for 5 minutes. Filling: Combine onion, bacon and che eses; fill each pastry shell. Liquid Filling: Combine eggs, half & half and sea sonings in large mixer bowl. Pour into pastry shells over the bacon mixture. Ba ke at 350 degrees for 20 minutes or until set. Can be prepared ahead of time an d frozen. Recipe from "One Million Recipes CD"

Ingredients - This will make 12 Mini Quiches
1 sheet of Puff Pastry
2 Rashers of Bacon (of 4 for the North America style)
1 half of a White Onion
125 ml of Full Cream
1 Egg
15 ml of Dijon Mustard
Black Pepper to taste
Bake in a pre heated oven 180c/350f for 20 to 25 mins or until set and lightly golden on the tops
For another option without the bacon, try some oven roasted capsicums and olives :-)

Quiche is simple: Eggs, cream and cheese with some additional flavoring, such as onion, bacon and/or spinach. I make a really simple pastry shell for added convenience. These mini quiches would make excellent appetizers or food to go on a buffet table. They also freeze well. I freeze them and heat one later for a treat when I want a little something to nibble on.

This super easy Quiche Recipe is so delicious and simple to make. Quiche is one of my favorites because its so versatile. It works just as well for breakfast as it does for dinner! Feel free to be creative and switch it up with your favorite cheeses, vegetables, or meats to make it perfect suit your taste!

Ingredients:
1 pie crust refrigerated
6 large eggs
3/4 cup half and half
1 tsp salt
1/4 tsp black pepper
1 1/2 cups cooked ham chopped
1 cup mozzarella cheese shredded
1 cup cheddar cheese shredded
4 tbsp scallions
Instructions:
1. Preheat oven to 375F and place frozen pie dish into refrigerator to thaw.
2. In a large bowl, mix together eggs, half and half, salt and pepper.
3. Once the pie crust is thawed, pierce the bottom with a fork then sprinkle the ham, scallions, and 1 cup of the mozzarella and cheddar mix into the pie crust. Pour the egg mixture over the top and sprinkle the remaining cup of cheese on top.
4. Bake for 25 minutes covered then cover with aluminum foil for the remaining 10 minutes if the crust starts to brown too much.
5. Once the center is completely set, let cool for 5-10 minutes before slicing and serving.
