How To make Mini Strawberry Cheesecakes
2 cups flour
1/2 cup powdered sugar
2/3 cup butter
16 ounces cream cheese
softened
1/2 cup granulated sugar
2 eggs
10 ounces frozen strawberries :
thawed and undrained
fresh strawberries -- cleaned & sliced
1. Preheat oven to 350 degrees. Mix flour and sugar. 2. Cut in butter until mix ture resembles fine crumbs. 3. Press firmly and evenly in bottom of ungreased r ectangular pan, 13 x 9 x 2 inches. 4. Bake 15 minutes. 5. Beat cream cheese in medium bowl until smooth and fluffy. 6. Beat in granulated sugar and eggs. 7. S tir in strawberries (undrained). 8. Spread cream cheese mixture over baked laye r. 9. Bake 20 to 25 minutes or just until center is set. 10. Cool completely. C over loosely and refrigerate about 4 hours or until firm. 11. Cut into about 2 x 1 1/2 inch bars. Garnish with sliced strawberries, if desired.

Mini Strawberry Cheesecakes
The recipe in this video is per the recipe I found online. Upon completing this recipe, I found I had leftover cream cheese filling. On the side, I made a little more graham cracker crust. 1/2 cup graham crackers 1 tbsp butter. This amount was enough to use up all the cream cheese filling making exactly 18 mini cheesecakes.
Recipe in video:
3/4 cup graham cracker crumbs.........for leftover filling add 1/2 cup graham cracker crumbs
plus 1 tablespoon of butter to make extra crust.
1 1/2 tbsp white sugar
4 tablespoons melted butter
2 packages cream cheese 8 oz
1/2 cup sour cream
1/2 cup white sugar
1 tsp vanilla
2 eggs separated (room temp added separately)
325 degree oven bake for 17 - 20 minutes
***When adding the eggs do not over beat. Just mix until you no longer see yellow yolk. Over mixing will cause cheesecake to crack on top.***

The cookie base
110g cookies
30g almonds (chopped or processed)
50g white chocolate
3 tbsp milk
Cream cheese filling
200g cream cheese
150g white chocolate
210g heavy cream (50g warm to mix with white chocolate; and 160g cold heavy cream - whipped)
Raspberry jelly
150g raspberries
25g sugar
1 tbsp lemon juice
6g gelatine (bloomed)
Extra raspberries and blueberries for garnish

Easy Mini Cheesecakes
Cheesecake has always been my weakness. Using Marias biscuit/cookies takes me back to my childhood days in Belize.
???????????? EASY MINI CHEESECAKES
???????????? CRUST:
1 pkg. (4.9 oz) Marias biscuit/cookies (about 1 ½ cups)
2 tablespoons white sugar
5 tablespoons margarine or butter, melted
???????????? FILLING:
2 pkg. (8 oz. each) cream cheese, softened at room temperature
2 eggs
½ teaspoon vanilla
2/3 cups white sugar
Bake at 325 F or 163 C for 20-22 minutes
