MINI APPLES PIES - BYRON TALBOTT
Home-made mini apple pies with apples fresh from the farmers' market. Thumbs up and SUBSCRIBE if you like the look of these.
Ingredient list:
5 Pink Lady apples
1 tbsp corn starch (corn flour)
2-3 tbsp brown sugar
Cinnamon, nutmeg, mace (whatever spices you like)
1 tsp salt
All-purpose flour
Cold Butter
Salt
Cold water
1 vanilla bean
Double cream
Sugar

More Holiday Recipes:
Pie crust:
2 cups of all purpose flour
1 tbsp granulated sugar
1/8 tsp salt
2/3 cup of shortening
2 tbsp unsalted butter (cold)
1/4 cup of cold water
Crumb topping:
1 and 1/4 cup of flour
1 stick of cold unsalted buter
1/2 cup of packed brown sugar
1 tsp ground cinnamon
(I don't add salt to my crumble)
Apple filling:
3 medium apples
1/4 cup of packed brown sugar
1 tsp ground cinnamon
Juice of 1 lemon or 2 tbsp Orange juice
1 tbsp unsalted butter
1 and 1/2 tbsp flour
1/8 tsp of salt
Easy Mini Apple Pie for Two - No pastry crust!
This is the easiest apple you will ever make! The buttery streusel topping is used for the bottom crust and the topping! There is no rolling out pastry crusts!

I used these pie tins: Mini Pie Tins:
Ingredients:
1 cup all purpose flour
1/2 cup sugar
1 egg yolk
1/2 tsp baking powder
7 Tbsp butter melted and slightly cooled
2 apples granny smith or other tart apple
1 tsp cinnamon
1 Tbsp sugar
Instructions:
Preheat oven to 350 degrees F.
Mix together flour, 1/2 cup sugar, egg yolk and baking powder together
Add in melted butter and mix until crumbly.
Press 1/4 of the dough into each of the two 5 inch pie tins. (use half the mixture) Press evenly on bottom and up the sides of the pie tin.
Slice, core and peel apples. Slice into 1/4 inch slices.
Place apples into pie tins.
Sprinkle each pie with half the cinnamon and remaining sugar.
Crumble remaining dough on top of the apples, breaking into small pieces.
Bake for 35-40 minutes or until apples are bubbly and topping is golden brown.

Filling:
- 4 apples
- 1/2 cup (95g) packed light brown sugary
- 1/2 cup (106g) granulated white sugar
- 2 teaspoons (4g) ground cinnamon
- 1/2 teaspoon (1g) ground allspice
- 1/2 teaspoon (4g) fine sea salt
- juice of 1 lemon
- 1 tbsp (9g) corn starch dissolved in 2 tablespoons (21g) water
Pie Crust:
- 2 1/2 cups all-purpose flour (375g), plus extra for rolling
- 3/4 cup unsalted butter, very cold, cut into 1/2 inch cubes
- 1.5 teaspoons (10g) fine salt
- 2 teaspoons (10g) sugar
- 6 to 8 tablespoons (108g) ice water
Baked Version:
- Puff pastry or pie dough...
- apple filling
- egg wash
- 1/2 cup (100g) granulated sugar
- 1.5 teaspoons (5g) ground cinnamon
- 1/2 teaspoon (2g) garam masala
- 1/4 teaspoon ground nutmeg
Filling:
- 4 apples
- 3/4 cup (150g) packed light brown sugar
- 1/4 cup (55g) granulated white sugar
- 2 teaspoons (5g) ground cinnamon
- 1/2 teaspoon (1g) ground allspice
- 1/2 teaspoon (2g) fine sea salt
- juice of 1 lemon
- 1 tbsp (7g) corn starch dissolved in 2 tablespoons water

Recipe:
• 1 package of Pre-made pie crust
• 1 granny smith apple, cored, and cut into chunks( leave skin on)
• 1 gala apple, cored, and cut into chunks (leave skin on)
• 1/4 cup white sugar
• zest of 1 lemon
• 1 tbsp orange juice
• 3/4 tsp cinnamon
• 1/2 tsp nutmeg
• 1/8 tsp ground cloves
• 2 tbsp all-purpose flour
• 1/2 tsp salt
• 1 egg beaten & 1tbsp water for brushing crust with
Directions:
• Preheat oven to 375°F
• Roll out pre-made pie crust over a floured surface; roll the pie crust out to about ¼ inch thickness and cut it into six sections. Use each section to fill each muffin tin cup, When pressed into the tin cups, poke holes at the bottom and sides with a fork to release steam and stop the crust from bubbling.
• Bake for about 10 minutes to par-bake the bottom crust.
• Mix together the apple chunks, nutmeg, cinnamon, ground cloves, sugar, salt, flour, orange juice and lemon zest to create the filling. Then add filling, making sure to see the pretty apple skins on top.
• Use the second rolled pie crust in the package, cut into about ¼ inch to ½ inch-wide long strips, and layer to create a lattice pattern.
• Brush pies with egg wash (1 egg + 1 Tbsp water, whisked together) and bake for about 15 more minutes, or until mini pies are golden brown and cooked through.
• Let them cool and top off with vanilla ice cream and cinnamon to serve!
Styling Tips:
• Curl the pie edges inwards to create a thicker barrier on the outside
• Poke holes in the crust to prevent pastry from bubbling
• Cut the apples in little chunks and leave the skin on for color
• Place the apples skin side up in the crust to see the color come through
• Layer the strips by weaving over and under and alternate each one
• Brush on an egg wash to create a crispy golden look to the top
• Use an unused paint brush to brush the egg wash
• Have everything set up and ready to serve before topping with ice cream
• Use a smaller ice cream scoop so you don’t cover the whole pie up
