How To make Millionaire's Shortbread
1/2 cup pastry (cake) flour
1/2 cup all purpose flour
1/3 cup superfine sugar
7 tablespoons unsalted butter, well-chilled
cut in small pcs
CARAMEL: 1/4 cup unsalted butter
1/2 cup firmly packed brown sugar
3 tablespoons light corn syrup
1/4 cup whipping cream
6 oz semisweet chocolate :
melted
Preheat oven to 375 degrees F. Combine flours and sugar in processor. Blend in butter using on/off turns until mixture is crumbly. Pat into bottom of 8x8x2-inch baking pan. Bake until shortbread just begins to color, 13 to 14 minutes. Remove from oven.
For caramel: Melt butter in heavy medium saucepan over low heat. Add sugar and corn syrup. Cook, swirling pan occasionally, until sugar melts. Increase heat to medium and cook until mixture registers 255 degrees F on candy thermometer (hard-ball stage), stirring constantly. Cool 30 seconds; stir in cream (be careful; mixture may bubble). Return pan to medium heat and stir until mixture registers 235 degrees F on candy thermometer (soft-ball stage). Pour hot caramel over shortbread. Cool to room temperature.
Spread melted chocolate evenly over caramel. Freeze until chocolate is firm, 10 to 15 minutes. Cut into 1-inch squares. Store in airtight container in cool place or refrigerate.
Makes about 5 dozen

I hope you're all having a great day so far....So here's a good wee recipe for an absolute classic :) Millionaire shortbread, or caramel shortcake as it's also known. This is the first time I've made this and it turned out very well.....I don't have much of a sweet tooth but everybody loved it :) I'll be making this again I'm sure! It's quite time consuming but worth the effort. Coming up tomorrow... it's that time of the week again where I show you what we had for tea during the week and what I made :)

2 Tablespoons golden syrup (I used Llyons)
400g Condensed milk (I used Carnation)
200g Melted milk chocolate (I used Cadbury Dairy Milk)
160g Plain/ all purpose flour
215g Salted butter (115g for the shortcake, and 100g for the caramel)
100g Soft brown sugar
60g White caster sugar
Edible gold spray (optional)

SHORTBREAD BISCUITS
75g unsalted butter, softened
30g caster sugar
1⁄2 tsp vanilla extract
115g plain flour, plus extra for dusting
1⁄2 tsp sea salt
CHEWY CARAMEL FILLING
90g double cream
1⁄4 tsp vanilla extract
1⁄4 tsp sea salt
90g golden syrup
105g caster sugar
30g unsalted butter, cold and cubed
TOPPING
100g good-quality milk chocolate (at least 33% cocoa solids)

How to Make Millionaire's Shortbread | It's Super Rich!
I was inspired to make this shortbread after seeing it posted on Instagram by my most prolific baking buddy Lan. If you have spent some time in my YouTube comments section or on our Flickr group, you’d know her pretty well. She’s living proof that all my recipes work.
But she bakes much more than just my breads and cakes and that is where this shortbread comes in. I’ve had millionaire’s shortbread before, but I had never made it though. Caramel is something I love a lot, so finally I decided that it was time to try and make it, and while I’m at it make a video about it too.
There are a couple good lessons in this recipe – the shortbread base and the caramel. Each can be used for many applications, so they’re great skills to learn. Both can be a challenging if you don’t know what you’re doing, but I’m sure that after watching this video you will be able to make them.

Millionaires Shortbread ???? Day 7 of my top 10 bakes!
Millionaires Shortbread ???????? in at number 4 on my TOP 10 BAKES of Jane’s Patisserie EVER! Recipe ????
Millionaires shortbread, shortcake, caramel slice etc… it has so many names, but it’s always SO tasty. It’s in all coffee shops, but it’s so easy to make at home ????????
????Recipe????
Ingredients:
Base
▪️200g unsalted butter
▪️100g caster sugar
▪️275g plain flour
Caramel
▪️200g unsalted butter
▪️3tbsp caster sugar
▪️4tbsp golden syrup
▪️397g condensed milk
Decoration
▪️200g milk chocolate
▪️100g white chocolate
????Method????
▪️Preheat the oven to 160ºcfan and line a 9” tin
▪️Mix the butter and sugar together and then add the flour
▪️Press into the base of the tin
▪️Bake in the oven for 20-25+ minutes until golden
▪️Add the butter, sugar, syrup and condensed milk to a large pan
▪️On a low heat, stir to dissolve the sugar and melt the butter
▪️Turn up to a rolling boil for 5-7 minutes until thickened and golden (stir constantly!)
▪️Pour onto the shortbread and set
▪️Melt the two chocolates separately
▪️Pour over the caramel and swirl together
▪️Set again
▪️To cut mine, I score the chocolate slightly, and then cut - ENJOY!
