Whole Grain Millet Bread Recipe | Gluten-free Ragi Bread
This video shows how to make whole grain millet bread. I have used whole ragi seeds also known as finger millet or nachini. Ragi is an excellent source of dietary calcium and other minerals. It is naturally gluten-free and plant-based. If you are following a plant-based gluten-free diet, this recipe will help you to add to your dietary calcium and protein intake. This recipe is toddlers and kids friendly too. This recipe is very easy to follow and requires fewer ingredients.
Ingredients:
150 g whole ragi
1 tsp honey
1 tsp yeast
4 tbsp cold-pressed coconut oil
1/4 cup any millet flour
1.5 tbsp arrowroot powder
1 tsp salt
1/4 cup basil seeds
1/2 cup water + as needed to grind the ragi

I love its simplicity, it takes no more than five minutes to whip up, then after that it's a matter of fermenting the dough over a few hours time, then baking it in a nice, hot oven. Aashirvaad Multi Millet Flour Bread
Preparation Time: 20 Mins
Cooking Time: 35 Mins
Serves: 1 Loaf
Ingredients
1 ½ Cups Aashirvaad Multi Millet Flour
1 ½ Cup Aashirvaad Whole Wheat Flour
1 Tbsp Powdered Flax Seeds
1 Tsp White Sesame Seeds (Til)
1 Tsp Melon Seeds (Charmagaz)
1 Tsp Quick Cooking Rolled Oats
1 Tsp Aashirvaad Salt
1 Tbsp Instant Dry Yeast
1 Tbsp Sugar
To Be Mixed Into A Topping
1/2 Tsp Whole Ragi
1/2 Tsp Whole Bajra
1 Tsp Quick Cooking Rolled Oats
1/2 Tsp Flax Seeds
Method
1. Combine the yeast, sugar and ¼ cup of warm water in a bowl and mix well. Cover it with a lid and keep aside for 10 minutes.
2. Combine all the remaining ingredients along with the yeast-sugar mixture in a deep bowl, mix well and knead into a loose sticky dough using approx. 1½ cups of warm water.
3. Place the dough in a greased bread loaf tin of 200 mm. (8”). Wet your fingers and press the dough lightly to spread it evenly.
4. Sprinkle the prepared topping evenly over it, cover it with a dry muslin cloth and keep aside in a warm place for 30 minutes.
5. Bake it in a pre-heated oven at 210°c (420°f) for 20 minutes.
6. Lower the temperature to 160°c (320°f) and bake it for 10 minutes. Keep aside to cool slightly.
7. Once the bread loaf has cooled slightly, de-mould it and cut it into 13 mm. (½“) bread slices.
8. Serve or use as required.

Oregano - 1 tsp
Olive oil - 1/8 cup

Tigernut Milk - 270ml
Melted Butter - 2 & 1/2 tbsp
Chia Seed (soaked) 2 tbsp
Jaggery - 2 & 1/4 tbsp
Salt 1 & 1/2 tsp
White Flour - 2 cups
Millet - 1 cup
Dried Oregano - 1 & 1/2 tsp
Dried basil - 1 & 1/2 tsp
Dried thyme - 1 & 1/2 tsp
Fast action yeast - 1 & 1/4 tsp
Put all in the Breadmaker in that order
Select the Basic Bread Program and walk away
Or
Put all in the Stand Mixer or in a bowl
Knead with Mixer or hands till stretchy
Cover and let proof for an hour or till doubled
Punch down, roll into loaf
Put in loaf pan
Leave to rise 30mins
Bake in preheated oven at 190 degrees centigrade for 30 to 35mins.
Optional:
Rub butter on the body after baking to soften the outside.
