How To make Midwest Apple Crunch Pie
KEVIN WILSON (MHDT47A) 1 9" single pie crust*
2 tb Granola; finely crushed*
3 c Apples; cored, pared, sliced
1/2 c Margarine; divided
2 Eggs
14 oz Eagle sweetened conden. milk
1 ts Maple flavoing
1 1/4 ts Cinnamon
1/8 ts Nutmeg
1/2 c Brown sugar; firmly packed
1/2 c Flour
1/4 c Granola; finely crushed
*If making own crust, add the 2 T of finely crushed granola to the flour before rolling out. Heat oven to 425 degrees For filling: Arrange apples in unbaked pie shell. Melt 1/4 c margarine. Beat eggs in medium bowl. Add sweetened condensed milk, melted margarine, maple flavor, cinnamon and nutmeg. Mix well. Pour over apples. For topping: Combine sugar and flour in medium bowl. Cut in remaining margarine until crumbly. Stir in granola. Sprinkle over custard. Bake at 425 degrees for 10 minutes. Reduce oven temp to 375 degrees. Bake at 375 degrees for 35 to 40 minutes or until golden brown. (Cover top or edge of pie with foil, if necessary to prevent overbrowning). Serve warem, at room tem or chilled. Pumpkin Pie Squares with Cinnamon Sugar Yogurt Topping
Enjoy delicious, warm pumpkin pie squares with a big glass of milk on a fall day.
Ingredients
For Crust
1 cup graham cracker crumbs
1/2 cup old-fashioned oats
1/4 cup brown sugar
1/4 cup butter melted
2 tablespoons low-fat milk
cooking spray
For Filling
2 cups canned pumpkin
2 eggs
3/4 cup sugar
3/4 cup low-fat vanilla yogurt
1/2 cup low-fat milk
1 teaspoon cinnamon
1 teaspoon pumpkin spice
1/4 teaspoon salt
1/2 cup pecans chopped
For Topping
2 tablespoons sugar
1 teaspoon cinnamon
1 cup plain nonfat yogurt
For Crust
Preheat the oven to 350° F. In a large bowl, mix together graham cracker crumbs, oats, brown sugar, butter and 2 tablespoons milk. Press into a thin layer in a 9×13-inch pan greased with cooking spray. Bake for 10 minutes.
For Filling
While the crust is baking, in another bowl, beat together pumpkin through salt. Pour over crust and bake for 40 minutes or until set. Sprinkle pecans over pumpkin filling and bake another 10-15 minutes or until center is set. Cool slightly in pan. Cut into squares.
For Topping
Mix together sugar and cinnamon. Mix in yogurt. Top each square with one tablespoon of yogurt topping.
