1 1/2 c Sifted cake flour 1 1/4 ts Baking soda 1/2 c Dutch-process cocoa 2 lg Eggs 1 1/4 c Sugar 2/3 c Oil 1 c Buttermilk 1 ts Vanilla 1/2 c Raspberry jam
FROSTING:
1 c Heavy cream 1/4 c Dutch-process cocoa 1/4 c Powdered sugar Line bottoms of 2 8-inch square cake pans with wax paper. In a large bowl thoroughly stir together flour, baking soda and cocoa. In another bowl, beat eggs until foamy; gradually beat in sugar; beat until thick and ivory color. to flour mixture add oil, buttermilk and vanilla; beat until smooth. Blend in egg mixture ~ batter will be thin. Turn into prepared pans. Bake in a preheated 350 degree oven until a cake tester inserted in center comes out clean - 35 to 40 minutes. With a small metal spatula, loosen edges; turn out on wire racks; cool completely. Put layers together with 1/2 cup raspberry jam. Beat together until thick, heavy cream, cocoa and powdered sugar. Frost top and sides of cake. -----

Sarawak Seri Kaya Midnight Cake Belachan Cake
I have not eaten this cake before but I think I nail it on my 1st try. The cake is dense, moist and chewy.. This is a interesting cake because it is made out from ingredients and drinks we usually had in the morning in Malaysia. This recipe is shared by Kenneth Goh - there is a detail write up in his blog. I think this cake is pretty easy to make, cause all you need to do is combined all ingredients then steam it.. the only thing is, it need about 3 hours of steaming...
Recipe: 125gm brown sugar 250gm melted butter 125gm condensed milk 250gm eggs (I cracked 5eggs lightly beaten it then pour out some to make it 250gm) 250gm kaya (coconut jam) 125gm milo (milo is a chocolate drink so I think should be fine to substitute with other chocolate drink as well) 125gm Horlicks (any malt drinks) 250gm all purpose flour 25gm chocolate emulco (recipe calls for 2.5tbsp emulco but I only had 25gm so I just use 25gm)
Mix 1st three ingredients to well combined, then slowly mix in each ingredients into the mixture..pour into a lightly buttered & floured 8inch round pan, then cover it in aluminum foil and steam it for at least 3hours.
I'm using electric steamer, you can use stove top steamer.. just make sure to refill the water..
I'm not good at steaming cake, but this is definitely very easy to do just that need to steam for quite some time. Serve it with some latte.. or milk.. it's a YUM ~
