How To make Mexican Stuffed Mushrooms
12 lg Mushrooms,2 1/2" diameter
1/3 c Thinly sliced green onions
1 Garlic clove,minced/pressed
3/4 ts Ground cumin
3/4 ts Chili powder
1 cn Tomato sauce
1 cn Diced green chilies
1/4 lb Jalapeno jack cheese,
-shredded 2 c Unseasoned stuffing mix
2 ts Salad oil
Twist mushroom stems free, trim off dried ends, and finely chop stems. In a 10-12" frying pan over medium heat, combine stems, onions, garlic, cumin, chili powder, and 1/4 cup water. Stir often until vegetables begin to brown. Add 2 tablespoons water, scrape browned bits free, and repeat step. Add tomato sauce, chilies, and 1/2 the cheese. Remove from heat and gently stir in the stuffing. Rub mushrooms with oil. Set cup side up in a 9x13" pan. Mound all the filling into caps. Sprinkle with remaining cheese. Bake in a 400'F. oven until cheese is lightly browned, 15-20 minutes. Per serving: 199 calories; 9.6 grams protein; 8.7 grams fat; (3.6 grams saturated fat); 23 grams carbohydrates; 731 milligrams sodium; 20 milligrams cholesterol. ~Kathy Addison, Albuquerque, New Mexico.

Air-Fried Stuffed Mushrooms | Mexican Styled | Vegan
Mexican Style Stuffed Mushrooms ????
Easy, healthy, and flavorful
Ingredients:
~Oil
~Sea salt, Black pepper, Red crush peppers
~Baby bella mushrooms
~Refried pinto beans (Recipe)
~Nutritional Yeast
~Jalapeño slices - fresh or jarred
~Frozen Corn
~The spice mixture - Dry Garlic Powder, Cayenne, Pink Salt mixed together
~Frank’s red hot/Cholula/ or any Mexican hot sauce
~Vegan Mexican Cheese & Sriracha - Optional
Process:
???? Prepare the stuffing:
Refried Beans (Click here for our recipe of Refried beans)
Nutritional yeast
Sliced jalapeños
Microwave for a minute. Stir well and keep aside
????Submerge frozen corns into water and microwave it for a minute. Drain & keep aside.
????Get those mushrooms, start stuffing. Oil, Salt , Pepper, Red crushed peppers, Corn, Beans mixture and the spice mixture. If you cannot make the spice mixture, try Tahin or just leave it out.
???? Bake it for 18 minutes in the Air Fryer. Vegan cheese on the top is optional. You don’t really need it as nutritional yeast takes care of the mild cheesy flavor.
???? sprinkle your Fav Mexican style hot sauce (I put Frank's Red Hot)optional Sriracha and dig in ????????

200 grams button mushrooms
2 tbsp vegetable oil
3 medium onions finely chopped
50 grams butter
6-7 garlic cloves finely chopped
100 ml heavy cream
2 tbsp all purpose flour
salt to taste
1 tsp black pepper powder
1 tsp paprika
2 tsp dry basil
2 tsp dry thyme
Fresh parsley/coriander for garnish
1 cup hot water/vegetable stock

This is one of my favorite videos ever because I love stuffed mushrooms and I love Mexican food.
This was the first one that we recorded in the last shoot and we were all hungry. My performance is not epic, but the food that is turned out is amazing. This is a very simple, entry-level preparation that most people would enjoy.
