Spanish Omelet
Here is what you'll need!
Spanish Omelet/Tortilla de Patatas
INGREDIENTS
1 onion, thinly sliced
3 potatoes, thinly sliced
500 milliliters olive oil
6 eggs
A pinch of salt
INSTRUCTIONS
Heat up the olive oil in a really hot pan.
Thinly slice the onion.
Slice the potatoes into 3-millimeters thick pieces.
Fry the vegetables in the olive oil over high heat for 10-15 minutes until they caramelize.
Drain the vegetables and save the olive oil for later use.
Add 6 eggs to a bowl and whisk. Add the fried vegetables, stir, and leave to set for 15-20 minutes.
In a nonstick pan, fry the egg mixture over high heat for 1 minute, then reduce to a low heat for 2-4 minutes.
Cover the pan with a large plate and carefully turn the omelet out onto the plate.
Slide the omelet back into the pan and fry for a further 3-5 minutes over low heat. To check the omelet is cooked, gently press on the centre of the omelet. If the surface springs back, it is ready.
Repeat step 8 to remove omelet from the pan and enjoy!

-Corn kernels boiled ½ Cup
-Tamatar (Tomato) deseeded & chopped ½ Cup
-Fresh jalapeno chopped 2 tbs
-Kali mirch (Black pepper) crushed to taste
-Namak (Salt) to taste
-Hara dhania (Fresh coriander) chopped 1-2 tbs

Directions:
Prepare Taco Chicken:
-In a frying pan,add butter & let it melt.
-Add olive oil,chicken & mix well until it changes color.
-Add red chilli powder,paprika powder,garlic powder,onion powder,dried oregano,salt,chicken powder,mix well & cook for 1-2 minutes & set aside.
Prepare Vegetables:
-In the same frying pan,add butter & let it melt.
-Add onion,capsicum,corn kernels,tomato,fresh jalapenos,mix well & cook on medium flame for 1-2 minutes.
-Add black pepper crushed,salt,fresh coriander & mix well.
-Add chilli garlic sauce,mix well & set aside.
Prepare Omelette:
-In a bowl,add eggs,water,salt,black pepper crushed,whisk well & set aside.
-In a frying pan,add butter & let it melt.
-Add whisked eggs,spread evenly & cook on low flame for a minute.
-On one side of the omelette,add grated cheddar cheese & mozzarella cheese,prepared vegetable, prepared taco chicken,black olives,fresh coriander,cheddar cheese,mozzarella cheese & flip the other side of egg,cover & cook on low flame until cheese melts (1-2 minutes).
-Drizzle sour cream,salsa,fresh coriander & serve!

This Mexican omelette is a great way to use prepped/cooked meat and add some flair to your morning egg routine. My Sprinter camper van kitchen may be small, but that doesn't stop me from cooking healthy. Getting enough protein in at breakfast can be a challenge for many people. Especially if you get bored easily with eggs. One thing I love to do is add meat to my omelette. This switches up the flavor profile of the eggs, and bumps up the protein to my suggested target range. I am always pushing to get 25-35 grams of protein per meal, especially breakfast. Each egg has 5-6 grams of protein, so if you are only having 2 eggs for breakfast it really needs to be bumped up more. Besides eating more than 2 eggs, you could add a side meat such as my turkey sausage breakfast patties, or add meat inside of your omelette as a filling.

This recipe uses one full egg, two egg whites, and leftover meat with refried beans for the filling. I happened to have a mound of leftover pork carnitas that I used in this recipe, and it turned out so good! Besides from shredded pork, shredded chicken (breast or rotisserie with skin removed) or beef (such as a brisket or barbacoa) would also be great.
Here is a snip photo of the green chiles I use. I keep a can of these in my pantry all the time. They are found in the Mexican aisle and are about $1.50. I only use a small bit inside of the omelette mixture, but you can also use some of the extra on top in place of a salsa. The green chiles add a very mild pepper flavor that is bright and flavorful.
Hopefully this will give you some inspiration for your next egg dish. I absolutely love eggs and I rarely get bored with them. They have many health benefits and are an affordable protein source.
