1 1/2 c Plain cornmeal 1 ts Salt 3 ts Baking powder 1 c Cream style corn 2 Eggs or egg sub. 1 lg Bell pepper (chop fine) 1 ts Butttermilk 2 Jalopeno peppers (chop fine) 2 c Sharp cheese - grated 1/2 c Chopped onion 2/3 c Cooking oil Few shakes garlic powder Contributed to the echo by: Karen Lamm Originally from: Mom Mexican Cornbread Mix all ingredients except cheese. Heat greased iron skillet and pour 1/2 the mixture into the pan. Put 1/2 of the grated cheese on top, then pour remaining mix over it. Put rest of the cheese on top. Bake for 35 minutes at 350F. Cool for at least 30 minutes before cutting.

2 cup cornmeal mix (not sweet) 1 can of cream-style corn 1 cup of buttermilk 1/2 cup vegetable oil 2 lg eggs bacon pieces (as much or as little as you like) 2 to 3 lg Jalapeños chopped 4 to 5 cups of shredded cheese
mix all ingredients together, pour in a greased 9x13 baking dish and bake in a 350° oven for 45 minutes.

2 boxes of jiffy cornbread mix 2/3 cup of milk 2 eggs 2 1/2 tbs of melted butter 2 tbs of granulated sugar 14.75 oz can of cream style sweet corn 1 cup of sharp cheddar cheese (can be substituted with pepper jack or another cheese of choice) *1 tbs of diced jalapeño peppers 2 tbs of sour cream Oil (to coat bottom of baking dish) *1/2 tbs of unsalted butter for top of cornbread (optional)

Putting additional cheese along the top is always an option!
You can also use more or less jalapeños depending on your preference. I use less to make it more kid friendly for our family ????
Bake in the oven at 350 degrees for 25-30 minutes or until sides are brown and/or toothpick comes out clean

Mexican Cornbread Muffins
Mexican Cornbread Muffins 1 cup Yellow Cornmeal 3/4 teaspoon Baking Soda 1/2 teaspoon Salt 1 cup Buttermilk 2 eggs 1/4 cup vegetable Oil or Corn Oil 1 small can (8 ounces) Creamed Corn 1 small Onion, chopped 1 to 2 tablespoons Jalapenos, chopped, picked or fresh 8-ounces Shredded Cheddar Cheese Mix first 3 dry ingredients together then add the rest and stir together. Spray a muffin tip with non-stick cooking spray and fill each cup with 1/4 cup worth batter. Bake at 400 degrees F for 22 to 25 minutes until golden brown. Let cool a couple of minutes then turn out onto a wire rack to finish cooling a bit. Good while they are still warm or room temp. Enjoy with your favorite pot of beans, soup, chili or simply with a glass of sweet tea.
