How To make Mexican Chili Excellent
1 lb Ground beef
15 1/2 oz Chili beans
hot and spicy
15 1/2 oz Chili beans :
hot
28 oz Tomatoes cut up
6 oz Tomato paste
1 1/2 c Celery :
chopped
1 c Onion chopped
1/2 c Pepper, green :
chopped
4 oz Chili peppers drained
Seeded and chopped 2 tb Sugar
1 Bay leaf
1 t Salt
1 t Marjoram, dried :
crushed
1/2 ts Garlic powder
1 d Pepper
4 oz Mushrooms (optional)
In crockpot combine beans, undrained tomatoes, celery, onion, tomato paste, green pepper, green chilies, mushrooms, sugar, bay leaf, salt, marjoram, garlic powder and pepper. In skillet brown ground beef; drain and stir into tomato mixture. Cook on low for 8 to 10 hours. Skim off excess fat. Remove bay leaf; stir before serving.

Chili
Slow cook on low for 8 hours or on HIGH for 4 hours
Ingredients
2 tbsp of pork fat (lard)
2 pounds of ground beef (80/20)
1 8oz pack chorizo
6 to 8 strips of cooked bacon
2 Anaheim peppers
1 Poblano pepper
1 can of chopped tomatoes
1 fresh tomato
1 white onion
1 can tomato sauce (8 oz)
1 can pinto beans 15.5 oz (fresh for best flavor)
3 garlic cloves
2 bay leaves
4 Tbsp Chili powder
1 1/2 Tbsp Mexican oregano
1 Tbsp sugar (read suggestion below)
1 Tbsp ground cumin
1 Tbsp garlic powder
1 Tbsp onion powder
1/2 Tbsp paprika
1 1/2 Tbsp chicken bouillon (adjust to taste)
1 tsp black pepper
1 tsp dry cilantro
1 tsp Worcestershire sauce
2 Chiltepines (optional)
Adjust salt to taste
1 Tbsp Maseca (fresh for best flavor) + 2 Tbsp water
Toppings- cheese, onions, cilantro, sour cream, and lime
Corn Bread
Bake for 35 to 40 minutes at 390 degrees (F)
Ingredients
4 cups yellow cornmeal or 4 1/2 boxes of jiffy corn muffin mix
2 1/2 cups milk
1 1/2 cups Mexican cheese blend
3/4 cup Mexican sour cream or Daisy sour cream
3 Eggs
2 cans of green chili
1 cup melted salted butter
1/2 cup Ap Flour
3 Tbsp sugar
3 Tbsp chipotle adobo sauce (add chipotle for extra spice)
1 Tbsp baking powder
1/4 tsp salt (if you like salty add 1 tsp)
Optional nacho jalapeños
*this is not a crumble cornbread. If you want my recipe for crumbly sweet cornbread let me know in the comments : )
Tip‼️
Please preheat your oven
Start with 1 to 2 tablespoons of sugar. I find that using 3 tbsp is best, I know many of you are watching your sugars and for the best flavor I say go with 3 Tbsp
Omit Chiltepines if you don’t want spice
1/2 cup butter if cheese is high in fat

I grind my Chuck Roast to a chunky grind and prepare it for the perfect chili. This is one dish that is sure to happen in our home. I love preparing a big pot of this chili with beans and serving it to family or friends, and having a wonderful time. I have played around with different spices and seasonings throughout the years until I got it just right then I've stuck with it ever since (there is no need to change anything) it is Chili at it's best. I like to serve the heat separately since I never know who will want heat or not, and I love topping it with Pco de gallo, freshly grated Colby jack cheese and cold sour cream, then I crumble big chunks of cornbread on the side, making it the perfect dish. This Chili will always be a hit in your home. ❤

3 Lbs. Chuck Roast (ground chunky)
4-5 Tbsp bacon grease (divided)
1 medium/large onion (chopped)
1 large green Bell pepper (chopped)
1 large yellow Bell pepper (chopped)
2 Lbs. diced fresh tomatoes (or 2 16 oz.cans)
1 Tbsp freshly ground cumin (or store bought)
4 large garlic cloves (ground in molcajete) or minced
1/2 C. water for molcajete
3 Tbsp ancho chili powder (or your choice)
3 Tbsp Gebhardts chili powder (or your choice)
1 Tbsp smoked paprika
2 Tbsp garlic powder
1 Tbsp onion powder
1 1/2 Tbsp Mexican oregano
Pepper (to your liking)
Salt (to your liking)
2 Tbsp Tomato paste
2 Tbsp Worcestershire sauce
2 Tbsp brown sugar
2 Tbsp beef bouillon (I used knorr) you can use Better than bouillon beef flavored
2 Tbsp Maseca corn flour with 1/4 C. water
2 1/2 C. Beef broth (as needed)
2 jalapenos (optional) I put 2 for my Ron

Now chili is a really complex recipe, there are a billion and one ways to make it and this is just ONE way, and the key to an award winning chili at home is to make it your own. That’s the key to any award winning recipe.
In this recipe we’re using
3 ½ lbs ground beef
½ onion
3 garlic cloves
4 tbs chili powder 3 Fiesta / 1 Gephart
2 tsp smoked paprika
¼ cup tomato paste
1 bell pepper
2 tsp cumin
½ tsp oregano
1 tsp cayenne pepper
1 TBS OG - add to taste at end
1 TBS WOW -add to taste at the end
3 Roma tomatoes
We’re also adding
Mirepiox
(thats ½ chopped onion, ¼ cup chopped carrots, ¼ cup chopped celery)
2 TSP Better than Bouillon or use beef broth in place of water
2 TBS masarina or flour to thicken if necessary or desired
Condiments at my house
Onions
cheese
Salsa verde to taste
Chili piquin to taste
Habanero to taste
Beans of your choice, yes i said beans haha
Now here is the biggest pro tip that the chili champs use – brown your meat over high heat before adding it to the dish. This will take your recipe to a whole other level of flavor nirvana.

????Sauté 1 chopped onion & 1 chopped bell pepper in a little olive oil. ????Then add 2 lbs of ground beef and break it apart with your spoon until it’s browned all the way through. (Drain the fat). ????Season with salt, pepper, cumin, chili powder & cayenne pepper????Add 1 cup of beef broth & 2 28oz cans of crushed tomatoes ????Next add 2 cans of rinsed kidney beans & re-season the chili with the same spices you seasoned the beef with ????Give everything a big stir and raise the heat until it just starts to bubble ????Now lid it, reduce the heat & let it simmer for at least 30 minutes. The longer it summers the better! ????Serve with shredded cheddar cheese & sour cream.

Mexican Chilli | Instant Pot | Kravings
This delicious Mexican Chilli recipe is made in my new Instant Pot. I defrosted a chunk of frozen ground meat before making this delicious dish!
Here are the ingredients and steps to make this recipe!
Recipe:
2 lbs ground Beef
1 cup diced Onion
3 tbsps minced Garlic
2 tbsps minced Jalapeno
1.5 cups diced red Pepper
1.5 cups diced green Pepper
2 cups mixed canned and drained beans of your choice
2 cups whole or diced canned tomatoes
2 cups stock
4 tsps Cumin powder
3 tsps Paprika
1 tsp Mexican Chilli powder
1 tsp black Pepper
Salt
½ cup canned Corn
¼ cup chopped fresh Cilantro
Set the IP to saute mode and heat some oil and saute the onion followed by the garlic and jalapeno
Add the Beef and cook till browned
Add the spices & salt
Add the red and green peppers
Add the beans and the tomatoes
Follow with the stock
Cancel the Saute setting, change to Pressure Cook or Manual and set for 10 mins
Once done allow the steam to quick release if in a rush
Cancel and set to Saute mode again
Add the corn and coriander
Serve with a dollop of sour cream and grated cheese
This Chilli is heart and delicious, top with some sour cream and grated cheese and you have an instant party! Speaking of parties, this is a great recipe for a potluck, double, triple or quadruple the recipe as required and take the IP with you so serve it hot and fresh.
