I decided to finally post a burger recipe on my channel, so I went with a Chili Cheese Burger, that also has bacon, but in this case, not just regular bacon! Pig Candy is what I used, and it added such a great flavor with all the other flavors that was going on with this burger. As I ate the burger, I could taste all the ingredients as should be. No one ingredient over powered the next! It was a fantastic burger! The chili I used in this video is a chili that I developed way back in the early 1990's. I use to sell chili dogs, as well as other items at work. It was a nice second income for me. When I first started selling the chili dogs, I knew they were a big hit with everyone. I sold out daily, and if I could have managed to bring more in, I certainly could have sold them all. I was asked from many people to share my recipe, and I never would give it away, but that was then, and this is now, so I'm sharing this great chili dog recipe with the world, and show you step by step how to make it. It's even better if made a day in advance, and it freezes very well too! I would put my dogs together the night before work and place them in the fridge wrapped tight in deli wrap and foil wraps. The next morning I would place them in my ovens at work and re-heat them in their wrapped state, and this steamed the buns as they heated, and I would recommend that if you use this chili for chili dogs, then do them this way for some awesome dogs!

Chili Cheeseburgers on the Griddle (with Homemade Chili Sauce)
This chili cheeseburger on the griddle is made with a homemade chili sauce, and even a homemade chili seasoning. If you want awesome griddle burger ideas to make on your griddle or flat top grill, then try this homemade chili cheeseburger recipe!
I started out by smoking a chuck roast to grind up for my burger chili sauce, but you can definitely substitute browned 80/20 ground beef to make this recipe easier. It will be fantastic either way!
I personally like a thicker chili sauce for my hot dogs and burgers, more of like a condiment instead of a soupy soggy mess. If you want a thinner or looser chili sauce, then add more beef broth, beer, or water (or a combination of those), or don’t reduce the sauce as long.
Then, once your chili sauce is made, this chili cheeseburger cooks up like pretty much any other griddle burger. Just cook your seasoned burger patties on the griddle, maybe add in some sauteed diced onions if you want, and top your burger patties with a slice of American cheese.
Finish off your burgers with a good helping of the homemade chili sauce, some mustard, and raw diced onions, or add your favorite chili cheeseburger toppings.

We’re taking the chill off in the kitchen today with our Chili recipe. What’s great about chili is you can substitute any kind of meat whether is ground beef, wild game or even chunk meat. We’re giving you a great seasoning base and some ideas for your chili and from there you can customize to suit your tastes. Beans- no beans… hey I like a bean to give it an even heartier feel. So we hope you enjoy our chili recipe!

8- 10 servings
Cowboy Chili
2 pounds ground beef (wild game, chunk meat, etc.)
1 large yellow onion, chopped
2 (10 oz.) can Rotel (we used chunky), drained
1 Rotel can water
1 (15 oz) can tomato sauce
1 (16 oz) can kidney beans, drained (or your bean choice)
Green Chile Chipotle Relish (available or 3 - 4 chipotle peppers in adobo sauce, chopped or to taste
1/3 cup chile powder
½ tsp cumin
2 tsp oregano powder
2 tsp paprika or smoked paprika
2 tsp salt
3 tsp minced garlic
1. In a large pot or 12” Dutch oven brown the hamburger over medium high heat. Season with salt and pepper or seasoning of your choice, to taste. As the meat begins to brown, stir in the onions. Continue cooking until the meat has fully browned and onions are tender. If there is a lot of excess grease, drain.
2. Stir in the Rotel, water, tomato sauce, beans, chipotle peppers or relish. Stir in the seasonings. Adjust taste, if needed.
3. Cover and cook over medium-high heat until it reaches a boil. Boil a couple minutes. Reduce heat and simmer for about 40 minutes, stirring occasionally.
4. Serve warm with cheese, onions, sour cream, etc.

Now chili is a really complex recipe, there are a billion and one ways to make it and this is just ONE way, and the key to an award winning chili at home is to make it your own. That’s the key to any award winning recipe.
In this recipe we’re using
3 ½ lbs ground beef
½ onion
3 garlic cloves
4 tbs chili powder 3 Fiesta / 1 Gephart
2 tsp smoked paprika
¼ cup tomato paste
1 bell pepper
2 tsp cumin
½ tsp oregano
1 tsp cayenne pepper
1 TBS OG - add to taste at end
1 TBS WOW -add to taste at the end
3 Roma tomatoes
We’re also adding
Mirepiox
(thats ½ chopped onion, ¼ cup chopped carrots, ¼ cup chopped celery)
2 TSP Better than Bouillon or use beef broth in place of water
2 TBS masarina or flour to thicken if necessary or desired
Condiments at my house
Onions
cheese
Salsa verde to taste
Chili piquin to taste
Habanero to taste
Beans of your choice, yes i said beans haha
Now here is the biggest pro tip that the chili champs use – brown your meat over high heat before adding it to the dish. This will take your recipe to a whole other level of flavor nirvana.
