How To make Mexican Chicken (Pollo Mexicano)
1 ts Chilli powder
2 tb Soft brown sugar
2 tb Worcestershire sauce
150 ml Chicken stock
4 Skinless chicken breasts
1 ts Celery salt
2 tb Red wine vinegar
3 tb Tomato ketchup
3 Drops tabasco sauce
150 ml Natural yoghurt
Mix the chilli powder with the celery salt, brown sugar, red wine vinegar, worcestershire sauce, tomato ketchup, chicken stock and tabasco sauce. Deeply score the chicken and arrange in a flameproof dish. Pour over the chilli mixture, heat the grill to high and cook the chicken for 5 minutes. Reduce the heat and cook for 10 minutes on each side. Baste the chicken thoroughly with the chilli sauce and grill for a further 10 minutes or until the meat is tender and the juices run clear. Transfer the chicken to a warmed serving dish and spoon over any sauce from the grill pan. Top each portion with a generous dollop of natural yoghurt. Garnish with coriander or parsley sprigs and serve with a salad. Calories: 240 per serving

3 1/2 lbs whole chicken wings
2 tsp Montreal chicken seasoning
2 tsp garlic powder
2 tsp onion powder
2 tsp salt-free lemon pepper
1 1/2 tsp paprika
2 cups long-grain rice
1/2 medium onion
3 cloves garlic

1 tsp cracked black pepper
2 dried bay leaves

This pollo asado recipe is the ultimate zesty citrus chicken with bone-in marinated in citrus and spices, quick grilled then roasted for big Mexican flavor. So tender and juicy, this is absolutely one of my favorite roast chicken recipes!

THINGS YOU’LL NEED:
2.5 pounds chicken parts - bone-in, skin on - use a whole cut up chicken or your favorite parts, like leg thigh quarters, breasts, etc
1/2 cup olive oil + more as needed
Juice from 1 large orange
Juice from 1 large lime
2 tablespoons vinegar
6 cloves garlic, minced
1 tablespoon sazon + more for sprinkling
1 tablespoon achiote powder + more for sprinkling
1 tablespoon paprika or use cayenne for more heat
1 tablespoon Mexican oregano
1 teaspoon cumin
1 teaspoon red pepper flakes
Salt and pepper to taste
FOR GARNISH: Fresh chopped cilantro lime wedges, chili flakes

Mexican Pollo Asado/Mexican Marinated Chicken
2 lb boneless skinless chicken thighs
Marinade:
1 bunch of cilantro (after I made this I realized that I could have used 1/2 this amount of cilantro.)
juice of 2 oranges
juice of 2 limes
2 packets of Sazon seasoning Goya
(con culantro y achote) (coriander & annatto)
1 tbsp white wine vinegar
1/2 tsp salt
1/2 tsp pepper
1/2 onion
1/4 cup olive oil
**cook approximately 5 to 6 minutes on each side.**

It's Day 4 of my slow cooker Crockpot recipes. Today, I am making slow cooker caldo de pollo. This Mexican-Style chicken soup is perfect for a weeknight meal!
SLOW COOKER BEEF CALDO
INGREDIENTS
3 1/4 lbs bone-in chicken pieces
1 1/2 tsp salt
1 tsp onion powder
1 tsp garlic powder
1 lb cabbages
2 medium to large Russet potatoes
2 ears of corn
5 small to medium carrots
1 to 2 Mexican squash
1 celery stick
1/2 small onion
2 to 3 cloves of garlic
1 1/2 Tbsp tomato chicken bouillon powder
fresh cilantro
1 jalapeno (optional)
5 to 6 cups of water
salt and season to taste
