6 Slices toast, cubed (or
-equivalent of leftover -pound cake) 3 Bananas or apples, sliced
1 c Raisins
1 c Peanuts, chopped
1/2 c Blanched almonds, chopped
1/2 lb Monterey Jack cheese, cubed.

Capirotada is my favorite dessert, it just bring so much memories from my grandma! This is the way she used to make it. Ingredients: if you don’t want your capirotada to be super moist, adjust the amount of liquid, I used 3 cups of water you can add 1-2 I used 2 cups of whole milk, you can add only one.
6-8 slices of bolillo bread
Canola oil
2 piloncillos
7 whole cloves
2 cinnamon stick
1 can sweetened condensed milk
1 can evaporated milk
Your favorite toppings!!!!

Sweetened shredded coconut
Dried raisins

Ingredients;
1 1/2 loafs French bread
2 quarts water
2 Bars of Piloncillo (2 cups Dark Brown Sugar)
1 cup white sugar
1 1/2 cups raisins
1 1/2 chopped pecan pieces toasted
1 1/2 shredded cheddar cheese
6 sticks cinnamon
1 tablespoon anise seed
6 Whole cloves
1 1/2 melted butter
1 tablespoon butter
Butter and toast the bread 375 degrees F for 15-20 minutes turn half way through.
Prepare the syrup;
In a medium stock pot add the water, the piloncillo, the cinnamon sticks, Anise seeds, whole cloves and sugar. Bring to the boil, reduce heat to low, let this simmer for 45-1 hour. Add vanilla.
Strain the syrup, discard the seeds and cinnamon.
In a 9.25 X 13.25” inch casserole dish, spray with non stick spray.
Start by layering toast, sprinkle the Raisins, pecans and cheese. Top by pouring the syrup all over. Dont over soak. Continue going with the layer until all items are gone. Top with remaining syrup. Cover with sprayed foil paper. Bake at 350 degrees covered for 30 minutes, uncover and continue baking for 30 additional minutes. Serve warm or cold.

Today I'm making a delicious bread pudding. Always a hit at my house on Christmas day or for any Holiday such as Thanksgiving. Today I'm making it with my day old Brioche Style Butter Rolls, but just about any bread will do. Top it with my delicious creamy sauce and everyone will want seconds for sure. You can add raisins or other fruits or just leave the fruit out if you wish. RECIPE INGREDIENTS & MEASUREMENTS: Yields about thirty 1 cup servings
10 Bolillos
13 cups water (3 liters)
5 cinnamon sticks (32g)
1/2 tbsp. whole cloves (~1g)
4 Piloncillos (800g)
1/2 cup melted butter (125ml)
2 cups peanuts (300g)
2 cups crushed walnuts (300g)
2 cups raisins (300g)
3 bananas sliced
1 lb diced Panela cheese (453g)
Optional Mama Chelo’s Meringue:
6 egg whites (192g)
1/2 tsp. cream of tartar (~1.5g)
4 tbsp. sugar (50g)
SUBSTITUTIONS:
Bolillos: baguettes, French bread rolls, or any bread of your choice.
Piloncillo: 4 cups (800g) of Brown Sugar or Molasses may be used.
Panela Cheese: Queso Fresco, Monterey Jack Cheese, Mexican Manchego, Monterrey Jack. Ricotta, Paneer, or even cream cheese all make wonderful cheese alternatives for this dessert.
Peanuts/Walnuts/Raisins/Bananas: You can remove or add as much or as little of these ingredients as you like.

Leftovers can last in the refrigerator for up to 3 days.
** You can also fry the bread in butter or oil instead of toasting in the oven.
