How To make Mexican Beans and Barley
2 1/2 c Water
1 sm Onion; finely chopped
2 tb AM Unrefined Vegetable Oil
2 tb Chopped green chilis
1 ts Chili powder
1/4 ts Cumin powder
1 ts Sea salt (optional)
1/2 c Raw AM Bits-O-Barley
1 c Cooked AM Beans of choice
16 oz Canned tomatoes
1/2 c Plain yogurt
1/2 c Shredded Monterey Jack
Pitted black olive (opt.) Preheat oven to 400 F. Put the water, onion, oil, chilis, chili powder, cumin and sea salt in a large saucepan. Bring to a boil and add the Bits-O-Barley. Cover and let stand away from heat until all the liquid is absorbed into the barley. Chop the tomatoes and add to the barley with their juice. Stir in cooked beans. Turn the mixture into a 1-1/2 quart casserole dish. Spread the yogurt over the top and sprinkle with the cheese. Bake 15 minutes or until heated through and cheese has melted. Garnish with olives. RECIPE: Mexican Black Beans
INGREDIENTS:
1 teaspoon olive oil
2 - 3 teaspoons garlic, minced
3 - 4 teaspoons taco seasoning (or to taste)
1 teaspoon onion powder
2 15.5 ounce cans black beans, rinsed and drained
1 14.5 ounce can tomatoes, diced (with the juice)
1/4 - 1/2 teaspoon Kosher salt (or to taste)
1/4 cup cilantro, chopped (optional)
INSTRUCTIONS:
1: Heat olive oil in a large skillet over medium - low heat.
2: Add the garlic, taco seasoning and onion powder. Stir frequently for 1 - 2 minutes.
3: Stir in the tomatoes, black beans and salt. Increase the heat to medium. Simmer 7 - 10 minutes or until most of the liquid has evaporated. (Add a bit of water if the beans get too dry).
4: Remove from the heat. Top with cilantro and serve.
NOTES:
Adjust the seasonings to your taste. You can use another type of salt if you do not have Kosher salt.
For softer beans cook longer. Add a bit water if the beans get too dry.
I prefer the petite diced canned tomatoes.
These Mexican Black Beans are delicious served as a side dish, over rice or taco salad and in burritos, enchiladas or tacos.

●17 Bean & Barley Mix
●2 Tbsp. olive oil
●1 cup diced onion
●1 cup diced celery
●1 cup diced carrots
●1 cup diced green bell peppers
●1 or 2 cloves garlic , pressed
●Three 14 oz. cans low sodium chicken or vegetable broth
●1/2 cup water
●1 tsp. dried Italian Seasoning
●2 bay leaves
●One 14 oz. can Del Monte Petite Diced Tomatoes with Garlic & Olive Oil
●1/4 cup tomato sauce
●1-1/2 tsp. Sriracha Chili Sauce, or to taste
●1/2 tsp. Lawry's Seasoned Salt
●Ground black pepper to taste
●Optional: A handful of chopped cilantro
