How To make Mexicali Corn Casserole
1 cn Corn with red and green
Peppers -- drained 1 cn Corn, cream-style
2 tb Peanut oil
1 ts Sesame oil
1 lg Garlic clove
crushed
1 ts Fresh ginger root :
grated
1 1/2 lb Vegetables sliced
1/2 c Light stock or hot water
1 tb Oyster sauce
2 ts Soy sauce, low sodium
1/2 ts Salt
1/2 ts Monosodium glutamate :
Optional 2 ts Cornstarch
1 tb Cold water
Heat oils in wok with garlic and ginger, add vegetables and fry, stirring, for 2 minutes. Add hot water or stock and sauces, salt and msg mixed together. Cover and simmer for 4 minutes. Push vegetables to side of wok, add cornstarch mixed with cold water, stir until thick. Toss vegetables in sauce and serve immediately with boiled rice. Mexican Corn Salad
The giant salad form of the Mexican Street Food Esquites, a corn dish sold in cups on the streets of Mexico.
This corn dish is outrageously delicious. My friends are mad for it!
7 LAYER DIP | 7 LAYER PARTY DIP | MEXICAN 7 LAYER DIP
7 layer dip is a dip that everyone loves and is such crowd pleaser!! This
version is also super easy to put together!! It’s a perfect dish to bring to your next party or gathering! This is one appetizer you can’t get enough of!!
7 Layer Dip
Ingredients
16 oz can refried beans
10 oz can diced tomatoes with green chilies, drained
1 tablespoon + 1 teaspoon taco seasoning
2 10 oz containers guacamole*
16 oz sour cream
2 cups shredded cheddar cheese
2 Roma tomatoes, seeded and diced
1/2 cup sliced black olives
1/3 cup chopped green onions
Directions
Layer 1
Combine refried beans, diced tomatoes with green chilies and taco seasoning in a bowl. Spread onto the bottom of a 7 x 11 or 9 x 9 inch baking dish.
Layer 2
Spoon guacamole over the refried beans and spread evenly.
Layer 3
Spoon sour cream over the guacamole and spread evenly.**
Layer 4
Sprinkle over shredded cheddar cheese.
Layer 5
Sprinkle over diced tomatoes.
Layer 6
Sprinkle over sliced black olives.
Layer 7
Sprinkle over chopped green onions.
Serve immediately or make ahead or refrigerate overnight. Serve it with tortilla chips.
Notes
*Can substitute store-bought guacamole with homemade.
**When spreading the sour cream make sure guacamole is fully covered. This will keep it from being exposed to air and prevent discoloration.
For a larger crowd, make a double batch using a 9 x 13” baking dish.
