Easy Shortbread Cookies (Lime Squiggles) with Claire Saffitz | Dessert Person
These cookies are a style of shortbread called meltaways, so named because the addition of cornstarch to the buttery dough reduces gluten development and makes them melt-in-your-mouth tender. Aside from the cornstarch, though, these are not typical meltaways. I supplement the butter with cream cheese, which adds extra tang on top of the lime juice and zest, andI coat the finished cookie in a lime glaze rather than the usual confectioner's sugar. Ingredients:
DOUGH
1 1⁄2 cups all-purpose flour (7 oz / 200g)
1⁄4 cup cornstarch (1.1 oz / 32g)
3⁄4 teaspoon Diamond Crystal kosher salt or 1⁄2 teaspoon Morton kosher salt
1 stick unsalted butter (4 oz / 113g), at room temperature
4 ounces (113g) cream cheese, at room temperature
3⁄4 cup confectioners’ sugar (2.9 oz / 83g)
2 teaspoons finely grated lime zest
2 tablespoons fresh lime juice
2 teaspoons vanilla extract
GLAZE
1 cup confectioners’ sugar (3.9 oz / 110g), sifted if lumpy
2 tablespoons fresh lime juice
1 tablespoon unsalted butter, melted
1 lime, for zesting

Pecan Sandies are a super easy, must make for the holidays and require only a few ingredients. They are also known as Mexican wedding cookies. No matter what you call them they are simply delicious!

✅Ingredients
• 1 cup butter
• 1/3 cup granulated sugar
• 2 teaspoons water
• 2 teaspoons vanilla extract
• 2 cups all-purpose flour
• 1 cup chopped pecans
• 3 tablespoons powdered sugar, for rolling
✅Instructions
00:00:48 - What pecan sandies dough should look like
1️⃣ 00:00:11 - In a large mixing bowl, cream together butter and sugar until fluffy. Beat in water and vanilla.
2️⃣ 00:00:41 - Stir in flour and pecans until well combined. Shape dough into 1-inch balls. Place at least 2 inches apart onto two lightly greased or parchment-lined baking sheets.
3️⃣ 00:01:19 - Place shaped cookies into the fridge for 30 minutes while the oven preheats to 325 degrees Fahrenheit.
4️⃣ 00:01:49 - Bake in the preheated oven for 18 to 20 minutes until lightly golden. Remove from oven and let cool completely on the baking sheet.
5️⃣ 00:02:04 - Roll cooled cookies in powdered sugar*. Store in an airtight container.
NOTES
*One alternative is to roll your cookies in powdered sugar while still warm. The powdered sugar will melt slightly and create a different effect on the cookie. Try both and see which you like best! Either way is delicious.

Shortbreads are one of the easiest and delicious shortbread biscuits.
We can make this beautiful shortbreads with only a few basic ingredients.
Ingredients:
Sugar:75 g
Butter:150 g
Flour: All purpose flour:150 g
Corn Flour:75 g
A pinch of salt
Method:
Mix together in a separate bowl the flour, cornstarch and salt.
Cream in the butter and sugar .
Sift in, the flour into the butter until just combined.
Transfer on to a clean work surface and bring the crumbs into a dough form ,by squishing.Take care to not over-mix.
Roll dough out in to a sheet of thickness about 1 cm.
Cut the dough into rounds with a circular cutter and place on baking sheet, 2 apart.
Prick the center of each cookie a few times with the tines of a fork.
Bake at 325 F Preheated oven for 25-30 minutes or until just before they start to brown.
Cool on a wire rack and store in an airtight container.
