How To make Melt Away Butter Cookies
1 1/4 c Butter; softened
3/4 c Powdered sugar; sifted
2 1/2 c All-purpose flour
1/2 ts Vanilla extract
1/2 ts Almond extract
Few drops liquid food -coloring Chocolate-tipped butter -cookies: 12 oz Semisweet chocolate morsels
1 tb Shortening
1/2 c Pecans; finely chopped
Recipe by: Southern Living
Cream butter; gradually add sugar, beating at medium speed of an electric mixer until light and fluffy. Add flour, and mix well. Stir in flavorings and food coloring, if desired. Use a cookie gun to shape dough as desired, following the manufacturer's instructions. Place cookies on ungreased cookie sheets. Bake at 325 degrees for 15 minutes. Cool on wire racks. Store in airtight about 7 dozen ( 2-inch) cookies. CHOCOLATE-TIPPED BUTTER COOKIES: Melt together semisweet chocolate morsels and shortening. Dip half of each prepared butter cookie in chocolate mixture. Roll chocolate-dipped portion in finely chopped pecans. Place cookies on wire racks until chocolate is firm. NOTE: Melt-Away Butter Cookies call for a cookie gun to shape the dough. With a cookie gun, you can stamp out a wide variety of perfectly shaped cookies in a minimum of time, making this piece of equipment a practical investment for someone who does a lot of baking and entertaining. You'll find both electric and hand-pump models of cookie guns available in most kitchen shops or department stores. Most are constructed so that you can make mints, cheese straws, and canapes as well as cookies. Since the models differ in construction, follow the specific manufacturer's directions for assembling and loading the gun. -----

Green Peppermint Meltaways
(Betty Crocker's Cooky Book, 1963)
1c butter, softened
1/2c confectioners sugar
1tsp peppermint extract
1 1/4c cake flour
1/4tsp salt
green food coloring
Heat oven to 400. Mix butter, confectioners sugar, and peppermint extract thoroughly. In separate bowl, stir together flour and salt. Blend into butter and sugar mixture. Add food coloring, if desired, and mix until evenly distributed throughout. Drop by teaspoonfuls on ungreased baking sheet (cookies do not spread). Bake about 8 minutes, or until set but not brown. While cookies are still warm, dip in additional confectioners sugar OR colored sanding sugar. Makes 5 dozen cookies.

Lemon Cookies
Ingredients:
1/2 Cup salted butter (softened to room temperature)
1/3 Cup powdered sugar
1 Teaspoon lemon zest
1 Cup all purpose flour
Directions:
Preheat oven to 350F/175C. Line cookie sheets with parchment paper (optional). In the bowl of a stand mixer, or in a large bowl if using a hand mixer cream butter until smooth. Add powdered sugar and mix on low for 2 minutes. Zest 1 large lemon, this should give you about a teaspoon of zest. Add this into your bowl and mix on low until incorporated. Add in the flour and mix on low until the dough comes together. Lightly flour your rolling surface, form the dough into a disc and lightly flour the top. Roll to 1/4 Inch thickness and cut cookies using a 3 inch cutter. Re roll and cut your scraps as needed. You should get 12 cookies. Place on prepared cookie sheets and bake 10-12 minutes or until the bottoms are just beginning to brown. Let cool on the pan for a few minutes, then move to a wire rack to finish cooling. Dip cooled cookies in lemon icing and allow 2 hours to set.
Lemon Icing
Ingredients:
2 Tablespoons fresh lemon juice
1 Cup powdered sugar
Directions:
Combine fresh lemon juice and powdered sugar in a small bowl. Whisk until smooth. If too thin, add a little bit more powdered sugar. If too thick, add a bit more lemon juice. Dip tops of cookies, let set and enjoy!

These vanilla melt away cookies are ultra-light and delicate. They’re shortbread-like cookies but have more velvety texture. They’re very easy to make and only need few ingredients. They’ll definitely melt in your mouth as you take a bite on them.
You’ll need:
• ¼ cup (56g) salted butter
• ¼ cup (59ml) sweetened condensed milk
• ½ tsp vanilla extract
• ¾ cup + 3 tbsp (121g) cornstarch
