1/4 c Butter
1 1/4 c Graham cracker crumbs
2 tb Sugar
1 cn 16 oz Sliced Peaches,drained
1 pk Cream cheese 8 oz
1/3 c Sugar
1/2 c Sour Cream
1 Egg
1/2 ts Almond Extract
1/3 c Raspberry Jam
Microwave butter in pieplate,covered,for 1/2-1 minute on HIGH or until melted. Mix in crumbs and 2 tablespoons sugar;press onto bottom and sides of pie plate. Microwave on High for 1 1/2 to 2 minutes or until hot. Arrange peaches in crust. Microwave cheese in glass bowl 1 minute on MEDIUM,or until soft.Blend in remainding ingridients,except jam;pour over peaches. Microwave at High 3 1/2 -4 1/2 minutes or until edges are set,rotating once. Cool. Spoon jam on pie. or until soft. Typed for you by: Brigitte Sealing, Cyberealm BBS, Watertown, NY 315-786-1120

¿Te imaginas una cremosa cheesecake hecha con melocotones en almíbar?
La textura de mousse se consigue montado la nata muy firme y todo mezclado con una deliciosa crema de queso a la que se añade el puré de fruta en almíbar. Puedes hacer esta tarta con muchas otras frutas.
¿Por qué es necesario congelar la tarta?
Es una simple cuestión de imagen, congelada sale perfecta del molde, si perder su bonita forma. El congelado no afecta en nada a su sabor.
Para descongelar es aconsejable tener la tarta sin molde, toda la noche en el frigorífico.
Ingredientes.
Para la base:
150 g de galletas de desayuno
75 g de mantequilla fundida
1 cucharada de leche
Para la tarta de melocotón:
1 bote grande de melocotón en almíbar (850 g)
300 g de queso crema
200 g de nata para montar
40 g de azúcar
6 +1 hojas de gelatina
Elaboración paso a paso:
Tritura las galletas y mezcla con la mantequilla y la leche.
Prensa con un vaso y guarda en la nevera.
Haz un puré con los melocotones y 3 cucharadas de su almíbar. Reparte en dos recipientes. Para el relleno 2/3 y para la cobertura 1/3.
Monta la nata con el azúcar y reserva.
Hidrata 6 hojas de gelatina en agua fría.
Calienta 3 cucharadas de puré de melocotón y 3 de almíbar y disuelve la gelatina en la mezcla caliente.
Mezcla el queso crema con el resto de la fruta y añade la nata montada.
Vierte en el molde y congela la tarta.
Prepara la cobertura con el puré que has reservado y 10 cucharadas de almíbar.
Calienta y disuelve una hoja de gelatina (previamente hidratada).
Vierte con delicadeza sobre la tarta congelada y vuelve a congelar.
Desmolda la tarta mientras está congelada y deja que se descongele en el frigorífico o a temperatura ambiente.
Sorprende a tus invitados con esta deliciosa tarta de melocotón sin horno.

Bake Off's Candice whips up a summer dessert based on a retro classic. Packed full of roasted peaches and raspberries, her Peach Melba Meringue Pie is the perfect way to enjoy the season's best fruits.
How to make Peach Melba Squares
250g pack unsalted butter
300g golden caster sugar
1 tsp vanilla extract
3 large eggs
200g self-raising flour
50g ground almonds
2 just-ripe peaches
, stoned, halved, then each half cut into 3
100g raspberries
handful flaked almonds
1 tbsp icing sugar, to finish
Butter and line a traybake or small roasting tin, about 20 x 30cm. Heat oven to 180C/160C fan/gas 4. Gently melt the butter in a large saucepan, cool for 5 mins, add the sugar, vanilla and eggs, then beat until smooth with a wooden spoon. Stir in the flour, almonds and ¼ tsp salt.
Tip the mix into the tin, then lay the peach slices evenly on top – that way each square of cake will have a bite of fruit. Scatter the raspberries and almonds over, then bake for 1 hr-1 hr 10 mins, covering with foil after 40 mins. Test with a skewer: the middle should have just a tiny hint of squidginess, which will firm up once the cake cools. Cool in the tin for 20 mins, then lift out onto a cooling rack. Once cold, dredge with icing sugar, then cut into squares

This dish was created and named for a famous Australian opera singer Auguste Escoffier was a big fan of. But even beyond the history, this refreshing dessert is simply delectable in all the right ways.

PEACH MELBA RECIPE:
Ingredients:
6 peaches
1 cup white wine
2 cups water
¾ cup sugar
1 vanilla bean
3 pints raspberries
1 tablespoon sugar
1 tablespoon lemon juice
Fresh mint
2 pints vanilla ice cream
Method:
1. Combine in a pot the wine, water, sugar, and vanilla bean and bring to a slow simmer.
2. Cut peaches in half and mark an X on the bottom of each peach.
3. Add peaches to simmering liquid and poach for 2-3 minutes until soft, the time will depend on the ripeness of the peach.
4. Remove from the liquid with a slotted spoon and set aside.
5. Pre-pare the raspberry sauce. In a blender puree 2 pints of raspberries, 1 Tablespoon sugar, lemon juice and ½ cup of the poaching liquid, sieve to remove the seeds.
6. Scoop vanilla ice cream in a bowl add one peach ½ and drizzle with raspberry sauce and garnish with raspberries and fresh mint.
