Welcome back to The Food Experience!! This experience I am re-creating the famous chili recipe by Margaret Nadeau from Boerne, Texas. She took home first place in the Terlingua Chili Cookoff 2 times and this is some of the best chili I have ever tasted.

The spices I purchased from Mild Bills include: San Antonio Red, Cowtown Light, Attitude Adjusting Hot Stuff, Hungarian Paprika, Cumin, Granulated Onion, Granulated Garlic, Dixon Med Hot Chili Powder, Mexene Chili Powder, and San Antonio Original. How to Make Award Winning Chili Recipe
Today at the Purple Door I'm making chili!! It's finally getting cooler here in Alabama, so chii, gumbo, Brunswick stew, and the like are on my mind. You'll see from start to finish each process and just how super easy this recipe is to make!
Chili is always a go-to during them cooler months. In this recipe I use ground beef, but often use venison cut into small cubes, ground beef, and pork to really give it that earthy vibe. I add a cornmeal mix in at the end to make it thicker and even more earthy! This is truly an amazing chili!

Make Mild Chili Seasoning Mix

Ingredients (for 1 to 1.5 lbs of meat)
2 TB Onion Powder
1 TB Chili Powder1 TB Flour
2 TSP Cumin
1 TSP Salt
1 TSP Garlic Powder
1/2 TSP Sugar
1/4 Cup Water
Remaining ingredients
1.5 lbs of lean ground beef
1 large can of kidney beans
1 large can of diced tomatoes
1 large bell pepper
1 small can of tomato paste or 1/2 cup from a jar
1 to 2 cups of corn

This Award Winning Crockpot Chili Recipe is filled with beef, beans and veggies with a kick thanks to a secret spice blend and jalapenos. Award Winning Chili Recipe Ingredients
5 slices thick sliced, hardwood hickory smoked bacon
1 red bell pepper, chopped
1 green bell pepper, chopped
3 stalks celery, chopped
1 small yellow onion, diced
½ - 1 jalapeno pepper, seeded and diced
1 10.5 oz can beef consomme (you can also use beef stock)
1 6 oz can tomato paste
1 tablespoon Worcestershire sauce
2 15 oz. cans diced tomatoes, undrained
1 15 oz. can pinto beans in mild or medium sauce (also called Chili Beans)
1 15 oz. can kidney beans in mild chili sauce
2 pounds ground beef
Crockpot Chili Ingredients - Spices
4 tablespoons chili powder
1 tablespoon dried oregano
1 tablespoon white sugar
2 teaspoons cumin
1 teaspoon smoked paprika
3 teaspoons garlic powder
1 teaspoon basil
1 teaspoon Lawry’s seasoned salt
½ teaspoon ground pepper
½ teaspoon cayenne pepper
Award Winning Chili Recipe Directions
Prepare the vegetables for the recipe first. Roughly chop the red and green peppers and celery. Seed the jalapeno pepper(s), removing the seeds and membrane, then finely dice. Use more jalapeno for a spicier chili. Peel and dice one small yellow onion.
Cook the bacon in a large cast iron skillet, until the bacon is lightly crisp but not overdone. Remove the bacon and drain on a paper towel lined plate.
Saute the vegetables in the bacon grease for about 5 minutes, until tender. Remove the vegetables from the skillet, draining as much bacon grease from the vegetables as you can. Cook the ground beef in the skillet with the bacon grease. Cook the beef one pound at a time so the meat has enough room to brown and not steam. Break the ground beef into pieces about 1 - 2 inches. When cooked through, remove from the skillet and repeat with remaining meat.
Measure all of the spices into a small bowl, and mix together.
Now it’s time to assemble all of the ingredients into the slow cooker. Mix the beef consomme or beef stock in the crockpot with the tomato paste. Add the Worcestershire sauce and spice mixture, and stir to blend. Taste the mixture and adjust spices as you like. Add the cans of tomatoes and beans, all undrained. Add the beef and sauteed vegetables. Chop or cut the bacon into about ½ inch pieces and add to the crockpot chili mixture. Cover and cook on low for about six hours. I love that this is a crockpot chili recipe! It’s so easy to put together in the morning and have delicious chili ready for dinner!

Ingredients
5 strips uncooked bacon chopped*
1 large yellow onion diced (about 1 cup)
1 red pepper diced
3 cloves garlic minced (about 1 Tablespoon)
1 lb ground beef 455g
1 Tablespoon brown sugar
1 Tablespoon chili powder**
1 Tablespoon ancho chili powder**
1 ½ teaspoons smoked paprika
1 teaspoon cumin
1 teaspoon onion powder
3/4 teaspoons ground black pepper
½ teaspoon salt
1/8 teaspoon cayenne pepper***
1 1/4 cup beef broth 295ml
15 oz dark red kidney beans lightly rinsed and drained (425g)
15 oz black beans lightly rinsed and drained (425)
14.5 oz diced fire roasted tomatoes undrained (411g)
1 7- oz can fire roasted green chilis 198g
1/4 cup tomato paste 66g
1 Tablespoon Worcestershire sauce
Preferred toppings particularly sour cream, shredded cheddar cheese, and corn chips
Instructions
00:00 Introduction
00:29 Place chopped (uncooked) bacon in a large pot or Dutch oven and cook over medium heat until crisp and cooked through. Remove bacon to a paper towel lined plate and drain all but 1 1/2 Tablespoons of grease.
01:17 Add onion and pepper and cook until softened, about 3-5 minutes.
01:33 Add garlic and cook until fragrant (about 30 seconds).
01:45 Add beef, breaking apart with a spatula as you cook. Once meat is partially (about 50%) browned, add sugar and all spices (chili powders, paprika, cumin, onion powder, black pepper, salt, cayenne pepper) and stir well.
02:52 Add all remaining ingredients -- beef broth, beans, tomatoes, tomato paste, chilis, and Worcestershire sauce -- and your cooked bacon and stir well.
03:33 Bring to a boil and cook 1-2 minutes, stirring frequently.
03:45 Reduce heat and simmer, uncovered, stirring occasionally. Simmer for 30 minutes to allow flavor to really develop.
04:05 Serve with preferred toppings (sour cream, shredded cheddar cheese, and corn chips are a must!)
Notes
*For best flavor, DO NOT OMIT THE BACON. However, as someone who spent 23 years not eating bacon I wanted to include tips for those of you who might have the same restrictions. if you wish to make this recipe without bacon you *can* do so by skipping the first step, heating 1 1/2 Tablespoons of oil over medium heat, and then beginning from step 2. On the other hand, if you want additional bacon for garnishing, cook it now and reserve.
**You can substitute one chili powder for the other and use just traditional chili powder or just ancho chili powder, but I personally like the blend of the two.
*** This gives the chili a mild spice, if you like more heat increase to 1/4 teaspoon for a moderate spice. Add additional cayenne pepper at your own risk!
