How To make Mazetti
1 lb Ground beef (or leftover
- cooked meat) 8 oz Wide egg noodles, uncooked
- (1 package) 1 lg Onion, chopped (1 cup)
4 Celery ribs, chopped
- (1 1/2 cups) 1 lg Garlic clove, crushed
12 oz Corn, undrained (1 can)
10 oz Condensed tomato soup
- (1 can) 4 oz Mushrooms, stems and pieces
- undrained (1 can) 1/2 c Milk
1/4 ts Salt
1/2 ts Pepper
1/4 c Cheddar cheese, shredded
Put meat in skillet; drain well. Put meat, uncooked noodles and remaining ingredients, except cheese in slow cooker. Cover and cook on low setting 8 hours, or until noodles are tender. Top with cheese, cover and cook
until cheese melts. "This is the kind of recipe that can be varied as long as the soup is included and enough other liquid is added. It can be jazzed up with other veggies, and red and green pepper add color. For a Tex-Mex version, add canned chopped chiles and chopped black olives, chili powder and cumin. Although the cheese can be left off, it tastes better with it."

Did you know that family recipes have their own genealogy? I thought I was skimming yet another back-of-the-magazine recipe in a special family cookbook when I Googled Johnny Mazetti, and then one of its key ingredients, Sauce Arturo. It wasn't as simple as I thought. And it made me wonder: did my grandmother pick this recipe up in the Midwest, or did my grandfather's mother pick it up in Panama? A rather big question! I will never find the true answer, but I have solved it to my own satisfaction, barring the additional commentary of food historians or members of the Marzetti family. Join me on the front porch for the story of Sauce Arturo, Teresa Marzetti's restaurant in Columbus, Ohio that became an empire, my mother's undying love for her family, and and my military family's love for Johnny Mazetti.

Cheesy Ground Beef & Potato Casserole Recipe
INGREDIENTS:
1 1/2 to 2 pds ground beef
5-6 small to medium sized sliced yellow flesh potatoes - approx 1/8 thick
You can use Yukon Gold or Russet potatoes
1 cup finely diced onions
3/4 cup finely diced bell peppers
1/2 cup finely diced carrots
1 cup frozen peas
1 tsp. minced garlic
8 oz. grated cheddar and colby jack cheese
Sauce:
2 cans cream of mushroom soup
1 cup milk
1/2 to 3/4 cup sour cream
1/4 tsp. salt
1/4 tsp. black pepper
1 tsp. garlic powder
1/4 tsp. onion powder
Preheat oven 350 degrees Farenheit.
In skillet on medium high heat brown and chop ground beef until no longer pink.
Add onions, bell peppers, carrots, peas and minced garlic.
Cook and stir for 2-3 minutes and turn off heat and set to the side.
In a greased 9x13 pan put down a layer of sliced potatoes. Overlap a little and cover the bottom.
Separate meat/veggie mixture in half and sprinkle half on top of potatoes.
Pour half of sauce over the meat and spread out as best you can.
Sprinkle half of grated cheese over the sauce.
Repeat layers of potatoes, meat/veggie mixture and sauce.
Cover and bake for 1 hour at 350 degrees farenheit.
Remove cover and top with rest of grated cheese.
Bake uncovered for 30-40 minutes or until cheese is melted and potatoes are tender.
Let rest for 20 minutes before cutting and serving.
Enjoy.
