How To make Mashed Potato Pancakes
1 c Mashed potatoes
2 c Flour, sifted
1 t Salt
3 ts Baking powder
2 Eggs, beaten
1 c Milk
4 tb Light corn syrup
1 t Nutmeg
Combine potatoes, sifted flour, salt, and baking powder. Mix together the eggs and milk and stir lightly into the potato-flour mixture. Add corn syrup and nutmeg and beat well. This is a really easy recipe using ingredients you likely have at home already! The mozzarella can be easily substituted for your favorite cheese - cheddar is a great option.

Old Fashioned Potato Cakes - Potato Pancakes
2 cups mashed potatoes
1 egg
3-4 Tablespoons All Purpose Flour (stiffer cakes need up to 1/2 cup)
Using a medium bowl, stir together the mashed potatoes, egg, and flour. If your potato mixture is too thin, or you just want it stiffer, you may increase the flour up to 1/2 cup.
Form mixture into four patties and fry in hot oil until both sides are golden brown.  Serve while warm.

Still have leftovers? Make them into a new dinner.
DIRECTIONS
1. Pour oil into a large skillet over medium heat, filling it so the oil fills the pan a third of the way up.
2. In a large bowl, combine potatoes, cheese, chives, hot sauce, salt, and egg. Form into half dollar-sized dough balls, and drop by the spoonful into the warmed skillet. [Note: If your mashed potatoes are a little runny, add a 1 tbsp. of flour at a time until you can form dough balls]
3. Fry the mashed potatoes, a few at a time (without crowding the pan), cooking each side until lightly golden, 2 to 3 minutes per side.
4. Top potatoes with sour cream and additional chives before serving.

2 1/2 c. Mashed potatoes
1/2 c. shredded sharp Cheddar
1 tbsp. sliced chives, plus more for garnish
1/2 tsp. Hot sauce
1/2 tsp. salt
1 egg, beaten
