3 c Milk 3 c Water 1 ea Cinnamon stick (1-in long) 5 ea Cardamom pods 6 tb Sugar 6 tb Coffee, regular grind Combine water and milk in a saucepan and bring to a boil. Add cinnamon, cardamom pods, sugar and coffee into boiling liquid in saucepan. Stir a few times and boil over medium heat 3 to 4 minutes. Make sure it does not boil over. Strain coffee through cheesecloth into another pan. Place coffee over heat and bring to a boil. Pour coffee between two pans until thick and creamy. Serve in cups immediately.

Method 1. Roast 50g coffee beans. After 5 minutes the coffee bean will start shedding the skin. 2. After 10 minutes the beans will start popping so be careful the beans might burn! 3. After around 15 - 20 minutes the coffee beans will start to give out smoke. Then take it out. 4. Then in a pan with low flame roast 1 tbsp coriander seeds, 1 inch cinnamon, 18 pepper corns and 5 cardamon pods. 5. Then crush 1 inch dry ginger and add it when the coriander has turned brown. 6. When they are all well roasted take it out. 7. Then in a sulahu throw the coffee beans up and down to remove the skins. 8. Then in a pan on low flame roast the coffee beans and the spice mixture. 9. When they are a little roasted add 1/4 tsp ghee and 1/2 tsp sugar. 10. When the sugar is melted take the mixture out and let it cool down in the pan. 11. When it is cooled down grind it into a powder. 12. Then sift the powder through a fine sieve. 13. Then grind the lumps again and send it through a sieve again. Repeat this until you cannot grind the lumps anymore. 14. Then mix the powder well and place it in an airtight container. 15. There you go that is all you need to do make your own spicy coffee powder. Coffee-licious!
