1 lb Hamburg 1 cn Mushroom soup 1/2 c Chopped onion 1 tb Parsley flakes 1 ts Salt 1/2 ts Pepper 1/2 ts Sage 3 tb Ketchup 1 tb Barbaque sauce 1/2 ts Garlic powder 1/2 c Oatmeal Combine all ingredients in bowl and mix well. Pat down in casserole and bake (covered) 50 min. at 350, remove cover and continue to bake 15 min. to brown.

Maritime Madness Copycat [twisted mustard pickle family recipe]
Don’t you love a tried and true family recipe? I go to the cupboard where my old recipe box is kept, and open it to the back where I keep this sacred piece of paper. I have been making this Mustard Pickle recipe for over 20 years and I will always make at least a few jars. We usually plant cucumbers in the garden but this year we were gifted some yummy ones from family. A few years ago we tried some mustard pickle hot sauce from Maritime Madness and we LOVED it. At the end of last season we made a small batch of our own, with homemade hot sauce and mustard pickles. Who knows, maybe this recipe might become a family favorite too. In this video, I walk through this process and in the end, we have some yummy (and hot!!) sauce to try.

The Capt'n Galleys is a weekly cooking show featuring Capt'n Kenny, cook and creator of Capt'n Kenny's Fresh from Nova Scotia, Canada.
Today's episode features a delicious Crab Vanilla Rum Dip accompanied with plátanos (plantain chips).
Crab Vanilla Rum & Plátanos Recipe
Ingredients: 2 Tbs Butter 2 Tbs Olive Oil 2 Garlic cloves minced 1 cup minced White Onion 1 Red Bell Pepper minced 2/3 cup Gubba Vanilla Rum 3 to 4 dashes of Angostura Bitters 2 cups Cream cheese. 1 Lemon rind 3 Tbs of Fresh Chives chopped 1 Large Lime juice 2 cups Monterrey Jack cheese grated. 4 Green Plantains.
Maritime Madness Mayo 2/3 cup Mayo 2 Tbs of Maritime Madness Tropical Habanero Sauce.
Instructions:
Sauté the Garlic, Onion and Red Bell Pepper until opaque. Add the Rum, the Angostura Bitters. After tender, put on a baking dish to be mixed with the rest of the ingredients. Preheat the oven at 350 degrees. Add the Maritime Madness Mayo, Cream cheese. Mix and add the Lemon rind and the chives. Mix and add the Lime juice and top and one cup of Monterrey Jack cheese. Mix again, level it and top the mix with the rest of the cheese. Bake for 20 minutes at 350 degrees F or until bubbly brown.
Peel the plantains and cut them in 1/2 inch slices. Par-fry them in Olive oil for 1 1/2 minutes. Extract and whack them as per the video. Fry again until lightly brown.
Serve.
