Betty's Healthy Marinated Vegetables
Betty demonstrates how to make Marinated Vegetables as a side dish. This is a great way to add some tasty vegetables to your meal!
Healthy Marinated Vegetables
2 to 3 stalks fresh broccoli, rinsed, dried, and chopped
¼ medium cauliflower, rinsed, dried, and chopped
1 small yellow squash, rinsed, dried, and chopped
½ medium-sized red bell pepper, rinsed, dried, and chopped
½ medium-sized green bell pepper, rinsed, dried, and chopped
2 celery ribs, rinsed, dried, and chopped
1 small zucchini squash, rinsed, dried, and chopped
1 medium-sized cucumber, rinsed, dried, and chopped
1 ½ cups white vinegar
1 cup light-tasting olive oil
¼ cup sugar
1 ½ teaspoons yellow mustard
2 cloves garlic, minced
1 ½ teaspoons salt
1 teaspoon dried tarragon
In a large clear serving bowl, combine broccoli, cauliflower, yellow squash, red bell pepper, green bell pepper, celery, zucchini, and cucumber. Toss well. In a medium-sized bowl, stir together vinegar, olive oil, sugar, yellow mustard, minced garlic, salt, and dried tarragon. Pour over vegetables and toss well. Cover with plastic wrap and chill 8 hours or overnight. To serve, use a slotted spoon to dip marinated vegetables into salad bowl or onto a lettuce leaf on a salad plate. Delicious! Marinated Cucumber Salad | Cucumber and Onions in Vinegar
Marinated cucumber salad at dinner can only mean one thing, SUMMERTIME! This cucumber onion vinegar salad makes a healthy side for steak, grilled chicken, pork, burgers - whatever’s on the grill for your summer bbq!

QUICK & EASY DINNERS:

INGREDIENTS:
4 large cucumbers - sliced evenly
1 red onion - sliced thinly
½ c. apple cider vinegar
¼ c. extra virgin olive oil
1-2 tsp granulated sugar
½ tsp pepper
¼ tsp salt
DIRECTIONS:
Wash cucumbers and remove the ends and most the peel
Chop evenly into uniform slices and place in a medium size bowl
Remove skin from onion and cut in half, and then into thin slices, add to bowl
Add the vinegar, water, oil, sugar, salt & pepper to the bowl and mix well
Let marinate for 1-2 hours or overnight and serve as a fresh side!
