How To make Margarita Pie
1 1/2 c Pretzels, finely crushed
1 1/3 c Sugar
1/2 c Butter, melted
1 Lime, zested (outer green
-part grated off) 1/2 c Lime juice, freshly squeezed
14 oz Can sweetened condensed milk
2 tb Gold tequila
2 tb Triple sec
1 c Heavy cream, whipped
2 Drops green food coloring
-(optional) 1/2 c Heavy cream, whipped
12 Pretzels
12 Mint leaves
In a medium bowl place the crushed pretzels, sugar, and melted butter. Mix the ingredients together well and press them into a 9" buttered pie pan. Chill the crust in the refrigerator for 1 hour. In another medium bowl place the lime zest, lime juice, sweetened condensed milk, tequila, and triple sec. Mix the ingredients together. Fold in the 1 cup of heavy cream, whipped, and the green food coloring. Pour the mixture into the pie crust. Freeze the pie for 4 hours. Decorate the pie with the 1/2 cup of whipped cream, pretzels, and mint leaves. Ingredients

1 box Pillsbury™ refrigerated pie crusts, softened as directed on box
Filling
2/3 cup granulated sugar
2 tablespoons cornstarch
2/3 cup water
1/2 teaspoon grated lime zest
1/2 teaspoon grated lemon zest
2 tablespoons fresh lime juice
1 tablespoon fresh lemon juice
1 egg yolk
1 tablespoon butter
1 tablespoon tequila Topping
1/2 cup heavy whipping cream
1 tablespoon powdered sugar
1/4 teaspoon vanilla
Decoration
1/2 teaspoon grated lime zest

Margarita Pie/Weight Watchers
This recipe for Margarita Pie is one of my favorite spring/summer Weight Watcher desserts. It is light and refreshing and tastes just like a margarita in a pie form. It is also really easy to make!

Weight Watchers Points Plus: 6 PP per serving
Weight Watchers Playlist:
6 ounces limeade, slightly defrosted
2 Tbsp light margarine
2 1/2 ounces pretzels
1 Tbsp sugar
zest of lime
low fat vanilla frozen yogurt
1 1/2 ounces or one shot tequila
1/2 ounce or 1 Tbsp cointreau
Blend up pretzels in food processor until fine chunks. Add in sugar, mix again. Add margarine and mix again. While the food processor is running on low, add 2 Tbsp of limeade. Press crust mixture into pie pan. Bake crust at 375 for about 5 minutes. Add 4 cups of frozen yogurt to food processor and blend. pour in remaining limeade, tequila and cointreau and mix until just blended. Put the mixture in fridge to keep cool. Once crust is baked and cooled (I put mine in the freezer to speed up the process) pour filling in crust. Add zest of lime to the top of pie, cover and freeze for at least 3-4 hours before serving.
