How To make Margarita Cheesecake
CRUST:
Nonstick vegetable oil spray 1 1/4 c Graham cracker crumbs
1/4 c Unsalted butter melted
:
FILLING----- 3 pk 8-oz. "bricks" Neufchatel
-cheese -- (reduced-fat cream -cheese), room temp 1 1/4 c Light sour cream
3/4 c Sugar -- plus 2 tbsp
2 1/2 tb Triple sec or other orange
-liqueur 2 1/2 tb Tequila
2 1/2 tb Fresh lime juice
4 lg Eggs
TOPPING:
3/4 c Light sour cream
1 tb Fresh lime juice
1 tb Sugar
Very thin limes slices -- cut -in half Very thin lime peel strips
Made with reduced-fat cream cheese and light sour cream, this cheesecake is irresistible - just like its namesake cocktail. FOR CRUST: Position rack in center of oven and preheat to 350F. Spray 9-inch springform pan with 2 3/4-inch-high sides with vegetable oil spray. Mix
graham cracker crumbs and butter in medium bowl until blended. Press crumbs over bottom and 1 inch up sides of prepared pan. Refrigerate crust. FOR FILLING: Using electric mixer, beat cheese in large bowl until fluffy. Beat in sour cream, then sugar, triple sec, tequila and lime juice. Beat in eggs. Pour filling into crust. Bake until outside 2 inches are set and center moves only slightly when pan is shaken, about 50 minutes. Remove from oven; turn off oven. FOR
TOPPING: Whisk sour cream, lime juice and sugar in small bowl to blend. Spread evenly over cheesecake. Return cheesecake to hot oven. Let stand 45 minutes or less (Cheesecake will look very soft, but will set up when chilled.) Refrigerate cake until well chilled, up to 1 day. Run knife around pan sides. Remove pan sides. Place cake on platter. Arrange lime half-slices and peel around top edge of cheesecake. Source: Bon Appetit (6/95)

Margaritas are definitely a favorite of mine, and this easy homemade cheesecake truly does them justice. The melt-in-your-mouth filling has the perfect ratio of lime to tequila, and you can easily adjust it to suit your specific tastes. The flavor of the alcohol is noticeably there, but it’s not at all overpowering – just like a good margarita.
For those of you who particularly enjoy that tequila flavor, the whipped cream is an absolute must. It’s such a nice way to bump up the boozy goodness of the cheesecake without having to adjust the ingredients in the filling. If you’re not interested in adding an extra pop of tequila, Classic Whipped Cream makes a wonderful topping as well.
The graham cracker crust on the bottom is super basic, but it really does bring the whole treat together. Its buttery, crispy texture beautifully balances the smooth, creamy filling and the soft, fluffy whipped cream. It also brings some sweetness to the table to complement the tartness of the lime.

Happy Cinco De Mayo Everyone! For this Cinco De Mayo dessert recipe, we are making an Eggless Margarita cheesecake. That's right, I am going to show you how to make a homemade cheesecake from scratch at home. One of my favorite treats on Cinco De Mayo is a margarita. So I decided to cheesecakify it. Keep in mind, this cheesecake is alcoholic but if you don't like to cook with alcohol, feel free to leave it out. It will not affect the recipe whatsoever. And as always, I encourage you to taste as you go and add margarita mix and tequila to your liking. I am going to put the recipe down below for how I made it but that is not the end all be all. Same goes for the topping of this cheesecake. My inspiration was the garnish and look of a margarita with the salt on the rim (Don't worry, its sugar. I like to test the boundaries of food but not that much.) and the lime wedge but decorating is where creativity comes out so by all means, make it your own. Also, because of the egg shortage caused by covid 19, this cheesecake is eggless.
