How To make Maple Baked Beans
1 lb Dried Navy pea beans or yell
6 c Cold water
1 t Salt
1/4 lb Salt pork
1 ea Med. onion, peeled
2 t Dried mustard
1/4 c Molasses
1/3 c Brown sugar
1/3 c Maple syrup
Wash beans and add cold water. Cover and let soak overnight. Add salt to beans and liquid and simmer gently until tender, about 1 hour. Drain, reserve liquid. Measure 1-3/4 cup bean liquid, add water if necessary. Cut a slice from the salt pork and place in the bottom of the bean pot. Add beans; place the onion in center of the beans. Mix mustard, sugar, molasses, and maple syrup with bean liquid; pour over beans. Cut 3 gashes in the remaining salt pork, and place on top of the beans. Rind side up. Cover and bake 5 to 7 hours in a 300?F oven, adding more water as needed. Remove cover from bean pot the last half hour so pork rind will brown and become crisp.

These maple baked beans turned out amazing!!! Everyone loved them and wanted to know how I made them. Of course I told them they had to wait for the video to come out. LOL ???? Really though, they turned out much better then I expected, but it took some adjusting to get them just right.
I will fully admit, I think I forgot 1 ingredient when I made the first batch of sauce that went on the beans. I forgot to add water to the sauce, but that's ok, because I added some at the end and the sauce just gave the beans an even stronger maple taste.
The changes I made to the recipe were these.
A. I double the recipe and forgot to add water to the sauce.
B. I made a second double batch of the sauce + 1 cup of hot water
C. I didn't add the full amounts of salt and pepper in the second double batch of sauce.
D. I slow cooked them for 12 hours on low and then 6 hour on high.

How to Make Boston Baked Beans ~ A New England Saturday Tradition!
Let this native New Englander show you how simple it is to make real Boston Baked Beans, just as they have been made since Colonial days, and I'll even show you a couple of favorite New England variations.
RECIPE:
Boston Baked Beans
1 lb. dried Navy, Soldier, Pea, or other favorite beans.
6 Tbs. brown sugar, packed
1/2 cup Grandma's dark molasses
2 tsp. dry Coleman's mustard
1 tsp. salt
1 medium onion, chopped coarsely
4-6 oz. fat salt pork belly, scored crosswise to rind in 1/2 inch squares. Do not cut through rind. Hint: pork cuts easier if frozen.
DIRECTIONS:
Pick over beans for defects or stones, wash, and soak overnight in 1-1/2 gallons water.
In morning, parboil about 25 minutes. Skins will crack open when blown upon. Do not add any salt.
Remove beans with slotted spoon to crock, but reserve the liquid, which will be needed throughout cooking for replenishment.
Add remaining ingredients and stir in enough of the reserved liquid generously to completely cover. Place pork on top of beans with the cut pork belly side down, with rind facing up.
Cover with crockery lid or cover loosely with foil. Do not seal tightly.
Check at least every 90 minutes and don't allow beans to dry out. Replenish with reserved parboil water as needed during cooking to maintain liquid.
Bake at 275° F for six hours, or until tender.
NOTE: Kidney, yellow-eye and certain others require longer cooking times at increased temperature of 300°.
