Mandarin Cheesecake by Dipna
Here’s a quick easy recipe for my mandarin cheesecake. I call this the world’s best cheesecake. It’s delicious!
Mandarin Cheesecake
Ingredients
2 x 298g tins or cartons mandarin segments
For the base:
Butter for greasing
180g digestive biscuits
80g unsalted butter
For the filling:
400g cream cheese
100g icing sugar
2 oranges (zest-grate)
300ml double cream
½ teaspoon green cardamom powder (optional)
¼ teaspoon fennel powder (optional)
Method:
1. Grease a 20cm/8 spring-form cake tin with the butter or mini foam tins x 3 or 4 depending on their size
2. Drain the mandarin segments and pat them dry lightly with kitchen paper and leave to aside
3. To make the cheesecake base, place the biscuits into a food processor and blend to form fine crumbs (alternatively crush in a clear plastic bag using a rolling pin to crush)
4. Melt the butter in a medium saucepan, add the biscuit crumbs and stir to combine, cook for about a minute
5. Transfer the mixture into the cake tin/s and press over the tin base, to spread evenly, this works best using the back of a dessert spoon to fill up the edges of the entire tin
6. Place in the freezer for 10 minutes to set
7. Beat the cream cheese in a large bowl and sift in the icing sugar and grate in the orange zest (add the cardamom and fennel at this time if you are using it)
8. In a separate bowl, whisk the cream until you reach soft peaks, and then fold it into the cream cheese mixture to combine
7. Spread the mixture on top of the biscuit base using a palette knife to level out. Chill in the freezer for about ten minutes (optional). When ready to serve arrange the mandarin segments on top of the cheesecake in a pattern moving around layer by layer
8. Carefully remove the cheesecake from the tin and experience heaven in a slice!
*Note: if you don’t wish to eat the cheesecake straight away, you may allow the cheesecake to set in the fridge instead of the freezer

200g Flour
100g Sugar
1 Tsp baking powder
4g Vanilla Sugar ( 1/2 Envelope)
1 Egg
80g Butter
FILLING:
1Kg Lowfat Quark
130g Sugar
50-70ml Oil
8g Vanilla Sugar ( 1 Envelope)
2 Eggs
400ml Milk
35g Vanilla Pudding powder ( Custard)

NO-BAKE Käsekuchen mit Orangengelee.
Rezept:
Zutaten (pro Form d-20cm):
150 g Kekse
40 Gramm Butter
300 g Sahne (33-35%)
400 g Ricotta oder Quark ab 15 % Fett (weich oder glatt reiben)
100 Gramm Puderzucker
1 TL Vanilleextrakt (optional)
15 g Gelatine für Quarkmasse
80 g Wasser
6 g Gelatine für Orangengelee
200 g Orangensaft
Kochen:
0:00 Kekse mahlen (150 g).
0:42 Geschmolzene Butter (40 g) hinzufügen und umrühren.
1:06 Eine 20-cm-Dose mit Pergamentpapier auslegen.
1:59 30 Minuten in den Kühlschrank stellen.
2:04 Gelatine (15 g) in Wasser (80 g) einweichen und quellen lassen.
2:20 Schlagsahne (300 g) mit einem Mixer.
2:47 Puderzucker (100 g) hinzufügen.
3:04 Ricotta (400 g) oder Hüttenkäse hinzufügen.
3:11 1 TL Vanilleextrakt (optional)
3:47 Wärme die Gelatine auf.
3:58 Zur Quarkmasse geben und glatt rühren.
4:27 Layout im Formular.
4:50 Im Kühlschrank ruhen lassen, etwa 40 Minuten.
5:55 Gelatine (6 g) in Saft (30 g) einweichen und quellen lassen.
6:14 Wärme die Gelatine auf.
6:24 Zum Saft (170 g) geben, umrühren.
7:07 Im Kühlschrank lagern, bis es fest ist, etwa 40 Minuten.

- 1 ml vanilla extract
- 2 tbsp sour cream
for orange jelly topping
- 200 ml fresh orange juice
- 8 gr agar powder
Refrigerate for 3-4 hours.
Tarkibi:
- 120 gr pechene
- 50 gr tuzsiz sariyog' (eritilgan)
- 8 gr agar kukuni
- 50 ml suv
- 200 gr qaymoqli pishloq
- 50 gr shakar
- 150 ml qaymoq
- 40 ml yangi apelsin sharbati
- 1 osh qoshiq apelsin qirindisi
- 1 ml vanil ekstrakti
- 2 osh qoshiq smetana
apelsin jeli bilan to'ldirish uchun
- 200 ml yangi apelsin sharbati
- 8 gr agar kukuni
3-4 soat davomida muzlatgichda saqlanadi.

Ingredients (recipe):
・About 16 to 18 oranges
* About 1.1 to 1.3 kg (38.8 to 45.9 ounces) with skin.
Cut into 3 rounds. Use 9-10 center pieces to decorate the sides of the cake.
〇 Mandarin orange puree
・700g (24.7oz) peeled tangerines
・70g (2.5oz) sugar
5 minutes over medium heat.
Turn off the heat, filter and cool.
〇Gelatin for mikan jelly
・Cold water 30ml
・6g (0.21oz) powdered gelatin
Mix well and chill in the refrigerator for 15 minutes.
〇Layer 1
Mold: Diameter 16 cm (6.3 inches), Height: 8 cm (3.15 inches)
Baking sheet
height: 10 cm (3.94 inches)
・Sponge cake diameter: 16 cm (6.3 inches), height: 2 cm (0.8 inches)
*Commercially available products are also OK.
・Syrup: 15g (0.5oz) sugar + 30ml water + 5ml brandy
〇Decoration on the side
・9 to 10 tangerines in the center
Place the cut center piece on the side of the mold.
Wrap and chill in the refrigerator.
〇Mandarin orange jelly
Mold: 11 cm (4.3 inches) in diameter
・225g (7.9oz) Mandarin orange(tangerine) puree
・Melted gelatin from above: 6g (0.21oz) powdered gelatin, 30ml cold water
*Soak in the refrigerator for 15 minutes. Warmed and melted in the microwave. Same hereafter.
Long in the mold and 30 minutes in the freezer.
〇Layer 2
・340g (12oz) cream cheese
・110g (3.9oz) sugar
・9ml of vanilla essence
・15ml lemon juice
・Melted gelatin: 11 g (0.39 oz) powdered gelatin, 55 ml cold water
mix well.
To another ball
・Fresh cream 420g (14.8oz)
Whisk about 60%.
Combine cream cheese and whipped cream.
Pour half of it into the mold, layer the hardened mandarin orange jelly on top of it, put the rest in and chill in the refrigerator.
〇Layer 3
・160g (5.6oz) Mandarin orange(tangerine) puree
・Melted gelatin: 10g (0.35oz) powdered gelatin, 50ml cold water
・120g (4.2oz) cream cheese
Mix well, strain and pour into molds.
Chill in the refrigerator for 3 hours.
〇Layer 4
・100g (3.5oz) Mandarin orange(tangerine) puree
・Melted gelatin: 4g (0.14oz) powdered gelatin, 20ml cold water
Mix well, Strain and pour into molds.
Chill in refrigerator for 1 hour.
〇Topping
・100g (3.5oz) white chocolate
Dissolve in hot water at approximately 50°C (122°F).
Before the chocolate melts completely, remove it from the hot water and preheat to melt.
Dip 10-12 large and small spoons into the chocolate.
Make a flower out of hardened chocolate petals.
