The BEST Baked Macaroni & Cheese Recipe | CREAMY SOUTHERN MAC & CHEESE
The BEST Southern Mac & Cheese is actually SO EASY TO MAKE! I have a couple tips and tricks to share to make you the designated Mac & Cheese maker!
Cheese Shredder
Southern Baked Mac & Cheese
16oz Box Elbow Noodles
3 Cups Chicken Broth
5 Cups Freshly Shredded Cheese
I use Sharp Cheddar, NY Extra Sharp White Sharp Cheddar, and Monterey Jack
5 Tbsp Butter
1 cup Sour Cream
1/4 Tsp Garlic Powder
1/4 Tsp Onion Powder
1/4 Tsp Salt
1/2 Tsp Black Pepper
Smoked Paprika to Taste
1 Cups Heavy Cream
1 Cup Milk (whole or 2%)
2 Eggs
Preheat Oven to 375 degrees. Cook Elbow Noodles in chicken broth and water to slightly less than al dente. (They will continue to cook while baking.) Drain. DO NOT rinse. Add 5 tbsp of butter to hot noodles. Stir in sour cream and seasonings. In seperate bowl, add heavy cream, milk and eggs. Slightly whisk together. In 9x13 dish, pour 1/2 of noodles. Pour half of cream mixture over noodles. Top with 1/2 of shredded Cheeses. Repeat the process....noodles, cream, cheese. Sprinkle with additional paprika. Bake for 35-45 minutes or until golden and bubbly. Let sit for at least 10 minutes before serving.

Seafood Mac and Cheese

Ingredients
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 cloves garlic, minced
1 medium yellow onion, diced finely
1 pound blue or lump crabmeat, picked for shells and chopped
1/2 cup dry sherry
2 tablespoons unsalted butter
1 tablespoon all-purpose flour
1 pint heavy cream
1 cup milk
1 tablespoon chopped fresh parsley, plus more for sprinkling
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh thyme
2 teaspoons dry mustard
1 teaspoon smoked paprika
4 ounces Gruyere, shredded (about 1 cup)
4 ounces Parmesan, shredded (about 1 cup)
12 ounces extra-sharp yellow Cheddar, shredded (about 3 cups)
1 pound elbow macaroni
4 ounces cream cheese
Directions
Preheat the oven to 375 degrees F.
Bring a large pot of salted water to a boil add 1 tablespoon olive oil.
Heat the remaining tablespoon olive oil in a large skillet over medium-high heat. Add the garlic and onion and cook, stirring occasionally, until they start to soften, about 5 minutes. Add the crab and cook, stirring occasionally, until the crab starts to brown, 3 to 5 minutes. Scoop the contents of the skillet into a bowl and set aside.
Deglaze the skillet with the sherry and reduce for about 5 minutes. Add the butter to melt, then add the flour and cook, stirring, until there are no remaining clumps. Whisk in the heavy cream, milk, parsley, tarragon, thyme, mustard and paprika, followed by the Gruyere, Parmesan and 8 ounces of the Cheddar. Bring to a simmer, then lower the heat and simmer on low for 10 minutes. Season with salt and pepper.
Meanwhile, add the noodles to the boiling water and cook according to the package instructions. Reserve 1 cup pasta water, then drain the noodles and return them to the pot (I like to just leave a little pasta water in the pot when I drain it). Add the cheese sauce, cream cheese and crab and mix well. (If the mixture is too stiff, add some pasta water 1/4 cup at a time.) Season with more salt and pepper, if needed.
Pour the mixture into a 9-by-13-inch baking dish. Layer the remaining 4 ounces Cheddar evenly over the top. Bake until the cheese is nice and brown, 10 to 15 minutes. (Be careful, the cheese may bubble over in the oven.) Let rest for 15 to 20 minutes before serving. Sprinkle with parsley.
Cook’s Note
Seafood Mac and Cheese can be made ahead and held, then reheated in a 200 degree F oven for 15 to 20 minutes.

BETH'S ULTIMATE MAC & CHEESE RECIPE
Serves 6

INGREDIENTS:
1 lb Pasta (450 g) (macaroni, shells, etc.)
8 tbsp (120 g) butter
6 ½ cups (1560 ml) milk
½ cup (60 ml) of flour
2 tsp (10 ml) salt
freshly cracked pepper to taste
¼ tsp (1.25 ml) nutmeg
½ cup (60 g) grated white cheddar cheese
½ cup (60 g) grated gruyere cheese
¼ cup (22g) freshly grated parmesan cheese
For Bread Crumbs:
2 cups (480 ml) thick rustic bread, cut into cubes
3 tbsp (45 ml) melted butter
1 tbsp (15 ml) fresh thyme, minced
salt and pepper to taste
METHOD:
Grease a 9” (23cm) x 13” (32cm) casserole dish or gratin pan. Preheat oven to 375F (190C).
Boil pasta according to package directions. Drain once pasta is “al dente” and still has a bit of chew to it. You don’t want to fully cook it in this stage since it will cook further in the oven. Set cooked pasta aside.
In a large pot, melt the butter, whisk in the flour to form a paste, slowly add the milk, whisking all the while. Add the salt, pepper and nutmeg. Remove from the heat, stir in the cheese. Set aside.
To make the bread crumbs, place all the ingredients in a food processor and pulse until large crumbs form. Set aside.
Transfer pasta to a large bowl. Pour cheese sauce over the pasta and stir to combine. It will look like a TON of sauce, but it will get absorbed into the pasta as it bakes in the oven.
Transfer pasta mixture to a greased casserole dish. Top with the bread crumbs. Place in the oven and bake 20-25 mins. Sauce will be bubbling and bread crumbs will be golden brown. If you want your bread crumbs more “toasty” you can pop under the broiler for a few seconds two.
Serve oven to table!
