Ingredients:
2 cups (450g) elbow macaroni pasta
2 tbsp (36g) + 2 tsp (12g) salt, divided
3 eggs
12oz. can carnation milk
2 cups (480mL) half & half
3⁄8 cup (90mL) melted butter
1 cup (125g) shredded American cheese
1 cup (125g) shredded mild cheddar cheese
4 cups (500g) shredded sharp cheddar cheese, divided
2 cups (250g) shredded Monterey jack cheese, divided
2 tsp (12g) ground black pepper
Method:
Cook pasta as directed on the packaging with 2 tablespoons of salt in the water. Bring the water to a boil, then add pasta and cook until it is al dente (cooked, but firm). This normally takes about 9 minutes.
Drain the pasta, and rinse under cool water. Set it to the side.
In a large mixing bowl, beat all three eggs until foamy. Next, add the carnation milk, the half- &-half, and butter. Mix until well combined.
Add all of the shredded cheeses, except 1 cup of sharp cheddar, and 1⁄2 cup of Monterey Jack cheese to the bowl. Add in the pasta next, followed by the remaining salt and black pepper. Gently mix all the ingredients together.
Spray a 9” x 13” baking dish with non-sticking spray, and then pour the macaroni into the dish.
Sprinkle the unused sharp cheddar and Monterey Jack cheese on top of the macaroni and an additional light coating of black pepper.
Cover the top of the dish with plastic wrap tightly and refrigerate for at least 1 hour.
Remove from refrigerator and bake on 350°F (176°C) for 40 minutes.
Let the macaroni and cheese sit for at least 5-10 minutes before serving.
Serve hot and enjoy!
Tips & Variations:
The best flavor is found from grating your own cheese from blocks of the listed cheeses. Preshredded cheese has additives in it that prevent the cheese from clumping together. This effects the final result of your cheese. Block cheese is also a cheaper alternative than buying the same amount shredded. Use preshredded cheese only when you either do not have time or energy to grate your own cheese.

Baked Mac N’ Cheese! The best cheese sauce recipe.
Use equal parts American cheese and cheddar cheese, chop it up and coat it with cornstarch. Bring water and butter to a boil, turn off the heat, then dump the cheese cornstarch mixture in and stir until smooth. Mix in goat cheese, salt, pepper, sugar, the cooked pasta, then at the end fresh mozzarella balls. Coat a baking dish with provolone cheese, put in your mac & cheese, top with tomato sauce and bake at 500°.
