How To make MACARONI & CHEESE JOANNA'S
Ingredients

cup
macaroni, uncooked
3
tablespoon
butter or margarine
1
sm
onion, finely chopped
2
tablespoon
flour
1
teaspoon
salt 1 ts dry mustard
1
teaspoon
salt 4 ts pepper
2
cup
milk
1/2
cup
shredded cheddar cheese
1
each
roll (hard crust sourdough or french)
2
tablespoon
butter 3/4 c shredded cheddar cheese
Directions:
Cook macaroni according to package directions.
In large saucepan, melt butter. Add onion and cook until tender. Stir in
flour, salt. mustard, salt and pepper. All milk slowly, stirring
constantly, and cook until sauce is thickened and bubbly. Add cheese and
stir until melted. Combine cooked macaroni and cheese mixture and mix
well. Pour into buttered casserole. (I use one that's about 12 inch square).
Top with topping and bake in 375 oven for 20 - 25 minutes.
To make topping: tear roll apart and use steel blade of food processor to
chop into fine bread crumbs. Melt better in small saucepan then add crumbs
and toss until covered with butter. Combine buttered crumbs with cheese and
spread over casserole.
I generally serve this with sauteed Kielbasa.

Over the Top Mac n Cheese
1 tbsp light olive oil
1 pound elbow macaroni cooked
1/2 cup (2 ounces) shredded Muenster cheese
1/2 cup (2 ounces) shredded Cheddar cheese
1/2 cup (2 ounces) shredded Monterey Jack
1/4 cup Mozzarella Cheese
1/4 cup Provolone
1 cup (8 ounces) Velveeta cut into small cubes
1/2 lb sauteed shrimp, chopped
1/2 lb steamed lobster, chopped
8 tbsp (1 stick) butter, melted
2 large eggs, lightly beaten
1/4 tsp seasoned salt
2 cups half-and-half
1 tablespoon paprika

*RECIPE*
Ingredients:
3 cups sharp cheddar
1 cup gruyere
10 slices (like 1 cup) American
4 cups whole milk
1 cup cream (or more milk)
1 stick of butter (+ more for topping)
1/2 cup of flour
1/3 panko
1 lb box of pasta
2 tsp Salt
Lots of freshly ground pepper
1 1/2 tsp paprika
1 tsp ground mustard
1/2 tsp cayenne pepper
Few dashes of garlic powder (forgot to show)
INSTRUCTIONS:
Boil 1 box of pasta (cavatappi) in salted water
Just shy of al dente (5 mins)
Add a little oil/butter after draining & transferring to a greased 9x13 pan so it doesn’t stick together
Melt 1 stick of butter
Add 1/2 cup of flour to make a roux
Stir & let cook down for a few minutes
Slowly add milk/cream while stirring
Bring to a boil then turn down and let it thicken up
Add cheese a handful at a time, while stirring
Add seasonings to taste
Topping
1/3 cup panko
2 Tbsp melted butter
Few dashes of Salt pepper & garlic powder
Pour sauce over macaroni, stir to combine
Sprinkle with topping & cheese
Bake 350 for 20-25 mins
*To reheat leftovers I poured a little bit of milk over top & covered with foil so it wouldn’t dry out*
*It made enough for 2 people to eat as a main dish (no sides) for 2 nights*
