Very Luscious Salmon & Shrimp Fajitas
Ingredients:
1 lb Large Shrimp, peeled & deveined
3 Salmon Filets
1 onion, peeled & thinly sliced
1 Green & 1 Red Bell Pepper, thinly sliced
2 packets of Old El Paso Fajita Seasoning (1 packet for shrimp and 1 packet for salmon. Marinate for at least 30 minutes.)
Mahatma Mexican Rice (follow cooking instructions on packaging)
1 Can of Bush’s Seasoned Black Beans (Heat)
Mexican Cheese, Sour Cream & hot Mexican red sauce
Corn Tortillas
Cooking Instructions:
1. Heat Skillet or Sauté pan for 8-10 minutes
2. Add 1 tablespoon of Olive Oil or cooking oil of your choice
3. Sauté onions & peppers for 5 minutes, remove from pan or skillet and set aside.
4. Add another tablespoon of oil to your skillet or sauté pan & heat until hot.
5. Add Salmon & Shrimp ( Salmon should be cooked 4 minutes each side & shrimp 2 minutes each side
6. Heat Tortillas
7. Plate Rice & Beans. Add onions & peppers to tortillas, add salmon & shrimp, sour cream, cheese, & top with red sauce.
8. Enjoy!

Sweet prawns in a slick of spiced garlic oil is the perfect addition to freshly cooked pasta. Add slices of sourdough toast and serve in deep bowls for instant comfort.
Serves: 4
Ingredients (US & METRIC):
350g/ 12 oz linguine
125ml/ ½ cup extra virgin olive oil
3 fat cloves of garlic, finely sliced
1 tsp smoked sweet paprika
Generous pinch of chilli flakes
800g/ 1 ¾ lbs raw king prawns, roughly chopped
Handful of flat leaf parsley, finely chopped

Ingredients List for your convenience:
Chicken & Shrimp:
1/2 to 1 tsp. each: black pepper, salt, onion, and garlic powders
1 tbsp. each of cornstarch
Peanut Sauce:
2 heaping tbsp. peanut butter
2 tbsp. water
1.5 tbsp. light brown sugar
2 tbsp. soy sauce
1 tbsp. rice wine vinegar
Red chili flakes to taste, or 1/2 tsp
Coconut Curry Sauce:
(1) 13 or 14 oz. can of coconut milk
1/2 cup water
1 tbsp. canola oil
1 tsp. sesame oil
4 garlic cloves, chopped
2-3 scallions, sliced
1 tsp. ginger paste
1/2 to 1 tsp. each: red chili flakes, cumin powder, coriander powder, paprika, salt to taste, black pepper to taste, allspice powder, turmeric powder
1 zucchini, thinly sliced or julienne
1-2 carrots, thinly sliced or julienne
3/4 to 1 cup frozen green peas
