How To make Lowcal Ricotta Cheesecake
1 pk Graham crackers -- (5 ounce)
3 tb Butter
2 tb Packed dark brown sugar
1 1/2 ts Ground ginger
2 15 ounce con part-skim
: ricotta cheese 3 eggs 1 egg white 1 c buttermilk 1/2 c granulated sugar 1 tb vanilla extract 1 orange peel -- grated, no : white 2 tb orange juice Preheat the oven to 375 degrees. Grease a 9-inch springform pan or spray with nonstick spray. To make the crust, place the graham crackers, butter, brown sugar, and ginger in the bowl of a food processor and process until well combined. Press into the bottom of the springform pan. Place the pan in the oven and bake 5 to 8 minutes. Remove from the oven and set aside to cool. To make the filling, place the ricotta, eggs, egg white, buttermilk, sugar,vanilla, orange peel, and juice in the bowl of a food processor or electric mixer and process or mix until smooth. Pour the mixture into the cooled crust, put on a baking sheet, place in the oven, and place a pan of water in the bottom of the oven. Bake 45 to 60 minutes, or until set.

In this video we are looking at a healthier alternative to your traditional cheesecake. This recipe will allow you to satisfy your sweet tooth without all of the guilt. I used cupcake pans and liners instead of a traditional spring form pan so that I am able to portion control better.
Remember it's ok to eat cake, just don't eat the whole cake!

In just one hour you can be in dessert heaven with this smooth and simple ricotta cheesecake (or ricotta pie). Flavors of cinnamon and orange zest add the burst of flavor you've been craving and the chocolate pieces add the perfect crunch to this soft and moist pie. You will really impress your guests with this perfect dessert to end the meal or a tea time snack or a great breakfast to wake up to.
Ingredients for a 22cm/9-inch baking tin:
- 750 g or 3 Cups Ricotta
- 175 g or 1.5 Cups Powdered Sugar
- 4 Eggs
- 85 g or 1/2 Cup Chocolate
- 1 Orange Peel Grated
- Vanilla Flavoring to Taste
- Cinnamon to Taste
Preheat Oven to 180°C / 350°F
Mix ingredients well.
Bake in Oven for 50 Minutes.
It tastes even better after a day in the fridge!
