How to make Low Calorie healthy Lasagna that tastes AMAZING
This is my go-to recipe when I make lasagna. I love this recipe. It is not super traditional but still taste awesome for the amount o calories that it has :)

Macros for the whole batch (2-3 servings): 1100Kcal, 60C, 135P, 31F
Ingredients:
- 400G Extra Lean ground Meat (5% Fat)
- 100G low Fat Mozzarella (100G =150 Kcal)
- 400G Canned Tomatoes
- 250G Mushrooms
- 1 Onion, 1 Carrot
- 60G Lasagna plates (2 Layers)
The Lasagna gets into the oven at 180°C (350°F) for 20 min.

Vegetable Lasagna - How to Make the BEST Vegetarian Lasagna

✅VEGETABLE LASAGNA INGREDIENTS:
➤1 ½ T olive oil
➤1 sweet potato, diced
➤2 red bell peppers chopped
➤1 red onion, diced
➤1 zucchini, chopped
➤1 tsp dried basil
➤¾ tsp kosher salt, divided
➤2 (24-ounce jars) tomato pasta sauce
➤2 tsp balsamic vinegar
➤10 oz. frozen spinach, drained and squeezed dry
➤15 oz. part-skim ricotta cheese
➤2 c shredded Mozzarella, Fontina, or Provolone
➤½ c freshly grated Parmesan cheese, divided
➤1 large egg
➤9 oven-ready (no boil) lasagna noodles
DIRECTIONS:
1. Preheat the oven to 400 F. Coat a 9×13-inch baking dish with nonstick spray.
2. Heat the oil in a large, deep skillet or Dutch oven, then add the sweet potato, onion, bell pepper, zucchini, basil, and 1/2 tsp. salt. Cook until the vegetables are tender, about 10 min.
3. Add the sauce and vinegar to the vegetables. Let simmer, stirring occasionally, for 10 min.
4. In a separate bowl, stir together the ricotta, ¼ c Parmesan, egg, and remaining ½ tsp salt. Add the spinach and break it up with a fork to combine.
5. Assemble the lasagna as follows: thin layer of sauce, 3 noodles, ⅓ of the remaining sauce, 1/2 of the ricotta mixture, the next ⅓ sauce, ½ cup of the mozzarella, 3 noodles, remaining ricotta mixture, 1/2 c. mozzarella, 3 noodles, remaining sauce, remaining 1 c. mozzarella and 1/4 c. Parm.
6. Cover and bake 25 min. Uncover, rotate 180 degrees, and bake 15 to 20 additional min, until hot and bubbly. Let rest 15 minutes, sprinkle with fresh basil, and enjoy!

My Famous Lasagna – Made Healthy! Whole Food Plant Based, Oil Free, Gluten Free DELICIOUS!
Wicked Kitchen Lemon, Garlic and Herb Seasoning Paste
1 TBS Black Peppercorns, toast
1 TBS Fennel Seeds, toast
8-10 Whole garlic cloves
1 Lemon, Peeled with microplane
1 TBS Rosemary, chopped
1 TBS Parsley, chopped
1 tsp Smoked Paprika
1 tsp Sage, fresh - diced
1 TBS Salt, coarse
1 tsp Chili Flakes - optional
Bolognese - Lentils:
1 Coffee Cup of green lentils, soak for an hour, then drain
8-10 garlic cloves, diced
1 lg carrot, diced
1 lg onion, diced
2 celery stalks, diced
1 can plum tomatoes
5 TBS Tomato paste/Puree
3 Coffee cups, water
Tomato Sauce:
4 can tomatoes, plum
½ jar / 230 ml / 1 cup roasted red peppers and liquid
2 carrots, diced
2 celery stalks, diced
1 Onion, diced
6 cloves garlic, chopped
2 TBS Wicked Lemon Garlic Herb Seasoning Paste
Cauliflower Mornay:
1 sm head cauliflower, chopped
1 potato, peeled and cut into chunks
5 – 6 TBS Nooch (more or less is optional)
½ Tablespoon White peppercorns, toasted, mortar pestle
2 clove - grind
½ tsp nutmeg
1 tsp Onion Granulated/powder
Tsp Corn flour
Oat/soy milk 300ml
Water
Kale, 1 Bunch, steamed
Regular or Gluten free Lasagna sheets
Assemble the lasagna:
Julienne 1 onion for the bottom of the pan – this will help prevent sticking and burning and only adds more flavor.
Layers:
Thin layer of julienne onion
Sauce
Pasta sheets
Bolognese
Pasta sheets
Little sauce
Kale
Mornay
Pasta sheet
Bolognese
Pasta sheets
Sauce
Mornay to top
Cover with parchment paper and seal with tin foil over that. This will help it all steam cook and roast inside without burning the top. Cook for 45-60 minutes at 180c/350f remove from oven, take of the wraps and bake an additional 15 mins to tighten the top.
Let rest at least 20 minutes to let it settle or overnight is best nut if you can’t wait – I get it.
