How To make Low Fat Nilla Nana Chocolate Chip Muffins
Ingredients

bananas, ripe, mashed

applesauce, sweet, or unsweetened

yogurt, vanilla-flavor, lowfat

chocolate chips, semisweet

cup
flour, all purpose

teaspoon
baking powder
1
teaspoon
baking soda
1/2
teaspoon
salt
Directions:
Preheat oven to 375 degrees. In a large bowl, combine the sugar and the egg and blend well. Add the mashed bananas, applesauce, and yogurt and stir to combine. Stir in the chocolate chips. In a separate bowl, combine the flour, baking powder, baking soda, and salt. Make a well in the center of the flour mixture and pour the wet ingredients into the well. Stir until just blended. The batter will be lumpy.
Pour the batter evenly into the two 8-cup muffin pans that have been well greased or lined with paper muffin cups. Bake for 10-15 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
This is a light-colored muffin so be careful not to overbake. Let the muffins cool in the pan for 2-3 minutes, then carefully remove and place on a wire rack to cool.
NOTE: You can substitute two 4-oz jars of banana baby food (such as Gerber) for the applesauce and use just 1 ripe banana. Or try other baby food fruits such as pineapple, apple or plum.

CHECK.WITH A WOODEN SKEWER OR TOOTHPICK. MAKE SURE THEY ARE COOKED WELL!!
SPRAY MUFFIN TRAY OR USE CUPCAKE LINERS. OR YOU MAY WANT TO USE A
LOAF PAN ( BUT CHECK BAKE TIME. WILL NEED. MORE TIME!)
1.5 CUPS OF OATMEAL ( ANY BRAND BUT NOT STEEL CUT) 12SP
2/3 CUP (PLUS 2 TBS FOR TOPPING.) SUKRIN BROWN SUGAR ALTERNATIVE( CAN USE ANY SUGAR AGAVE OR TRUVIA, SWERVE)
1 LARGE EGG
2.5 TSP BAKING POWDER
3 OR 4 MEDIUM RIPE BANANAS
1 CUP..OF PEACHES (.FRESH OR FROZEN).PLUS A COUPLE TO PUT ON TOP
1/2 CUP. UNSWEETENED APPLE SAUCE
2TBS CINNAMON
1 TBS VANILLA
1 OR MORE TBS LEMON JUICE
2 TBS SENSATO SUGAR FREE CHOCOLATE CHIPS ( OPTIONAL).2SP
PINCH OF SALT
*CAN ADD NUTS OR ALMONDS*
DIRECTIONS:
PUT OATMEAL IN A CUISINART OR ANY BLENDAR TO GRIND. PULSE FOR A FEW MINUTES
ADD OATMEAL FLOUR TO A BOWL
ADD SALT, 1 TBS CINNAMON AND BAKING POWDER AND MIX
IN A SEPERATE BOWL ADD SUGAR, EGG,APPLE SAUCE, VANILLA, LEMON JUICE AND BANANAS
MIX TOGETHER
IN A LARGE BOWL START ADDING DRY AND ALTERNATE WITH WET INGREDIENTS
END WITH DRY. MIX AND FOLD IN PEACHES AND ADD CHOCOLOATE CHIPS
ADD MIXTURE TO A MUFFIN TRAY OR LOAF.PAN
TAKE 2 TBS OF SUKRIN AND ADD 1 TBS CINNAMON MIX TOGETHER
TOP MUFFINS WITH A SLICE OF PEACH AND SPRINKLE CINNAMON SUGAR OVER
REMEMBER TO CHECK THEY ARE COMPLETELY COOKED WELL. AND ALLOW TO COOL BEFORE TAKING OUT OF TRAY OR LOAF!!

Banana Bread Mini Muffins
My family LOVES Banana Bread Mini Muffins! I bake banana bread in some shape or form almost every week; it only takes a few minutes to whip up the batter! I always buy tons of bananas at the beginning of the week, and this recipe is the perfect way to use up any slightly overripe bananas. These mini muffins are ultra moist, not-too-sweet, and have a nice banana flavor. Your whole family is going to love them!
Banana Bread Mini Muffins (makes 48)
1 ½ c. all purpose flour
½ tsp. salt
1 tsp. baking soda
3 very ripe bananas
2 eggs
1 stick unsalted butter, room temperature
½ c. white sugar
¼ c. light brown sugar
½ c. plain yogurt
1 tsp. vanilla extract
Cinnamon Sugar topping—1/2 c. white sugar mixed with 2 Tbsp. cinnamon stored in an airtight container.
Preheat oven to 350 degrees. In a medium mixing bowl, whisk together the flour, salt, and baking soda. In a large mixing bowl, mash together the bananas and eggs. Add the softened butter, white and brown sugars, yogurt, and vanilla. Mix to incorporate. Add in the flour mixture and stir together just until combined. Spoon batter into greased mini muffin tins. Depending on how big your bananas are, you might have a little bit of extra batter, but for me this recipe makes about 48 mini muffins (bake the extra batter too!).** Sprinkle the top of each muffin with a pinch of cinnamon sugar. Bake at 350 degrees for about 10-12 minutes. Cool slightly before eating. ENJOY!!
**You can bake this recipe as regular sized muffins (bake for about 15-20 minutes) or a 9x5 loaf (bake for about 50 minutes to an hour).

I tried making Emma's Goodies 5 minutes mini muffins without an oven!
I don't have an oven and i know many others may not as well,so i thought why not give it try and bake ,on the stove top.It turned out well now you can make these divine mini muffins yourself.

Emma's Easy Mini Muffins Recipe:
30 g Butter (2 tbsp)
30 g Flavorless Oil (2 tbsp)
1 room temp Egg
150 g Buttermilk or Milk ( 1/2 cup + 2 tbsp)
1/2 tsp Baking Soda
1/4 tsp Baking Powder
100 g Sugar ( 1/2 cup )
180 g All Purpose Flour ( 1 cup + 1/3 cup)
1/4 tsp Salt
1 tsp Vanilla
NOTE:If your muffins did not rise replace the baking soda with 1 & 1/4 tsp baking powder
2 tsp would be the most you'll need.

1/2 c. whole wheat flour
1/2 c. rolled oats
3/4 c. vanilla protein powder
1 Tbsp. Cinnamon
1 tsp. Baking powder
1/4 tsp. sea salt
1/2 c. walnuts, finely chopped
1 c. mashed banana
4 Tbsp. maple syrup
1 whole egg
1 tsp. vanilla
Directions:
1. Preheat oven to 350 degrees. Line cupcake pan with cupcake wrappers.
2. Mix dry ingredients together, leaving half of the walnuts aside.
3. Combine all wet ingredients; stir into dry mix.
4. Scoop batter into cupcake liners; fill to top.
5. Sprinkle/top with remaining chopped walnuts.
6. Bake for 25-28 min. or until toothpick comes out clean.
Let cool; store in fridge in airtight container.
