How To make Low Fat Cream Cheese Tube Cake

corn-oil margarine, softened

liquid egg substitute

egg whites

buttermilk

teaspoon
vanilla extract

teaspoon
lemon rind, grated

tablespoon
rum, or brandy or cognac
1
tablespoon
confectioners' sugar
Directions:
Heat oven to 325 degrees. Coat 10 inch tube or bundt pan with nonstick vegetable spray; set aside. Sift flour, baking powder and baking soda together; set aside.
Beat cream cheese and margarine with an electric mixer in large bowl until well blended. Add sugar and beat until light, 2 minutes. Beat in egg substitute, egg whites, buttermilk, vanilla, lemon zest and liquor; mix well. Add flour mixture and beat until just blended.
Turn batter into prepared pan. Bake until toothpick inserted in center comes out clean, 75 to 80 minutes. Cool in pan 5 minutes before turning out onto rack to finish cooling. Dust with confectioners' sugar while still warm.

Ingredients
For the CREAM CHEESE
Full cream milk – 1 ½ liters
Lemon juice – 4 tblsp
For the BISCUIT BASE
Digestive biscuit crumbs – 1 ½ cup
Melted butter – ½ cup
Icing sugar – 3 tblsp
For the CREAM CHEESE FILLING
Cream cheese – 1 ¼ cup or about 300g
Hung curd or yogurt – ½ cup
Sweetened Condensed milk – ½ cup
Icing sugar – 3 tblsp
Salt – a pinch
Full fat /Heavy cream – 1 cup
Vanilla essence – 2 tsp
Powdered gelatin – 1 tblsp
Hot water – 2 tblsp
For the RASPBERRY STRAWBERRY SAUCE:
Raspberry Strawberry Preserve or any berry preserve or jam – 3 tblsp
Water – 1/3 cup
