Directions:
Mix cottage cheese, vanilla, and sour cream. Separate eggs. Add yolks, first measure of fructose, and flour and mix until smooth. In a separate bowl, beat egg whites, second measure of fructose, and cream of tartar together until stiff. Fold this into the first mixture very lightly with a spatula. If desired, chocolate chips can be added at this time.
Smooth 1-1/4 cups graham cracker crumbs on the bottom of a 9-inch diameter pan for each pie to be made. Add cake mixture to each pan to a depth of about three inches. Bake in 250 degree oven for 1-1/2 hours.

Ingredients you’ll need:
CHEESECAKE FILLING:
- 226g/8oz (1/2 Cup) Fat Free Cream Cheese
- 255g Greek Yogurt (1 Cup)
- 1 Egg Yolk
- 70g Erythritol/Sugar Replacement Sweetener
- 15g (1 Tbsp) Vanilla Extract
- Pinch of Salt
- 2-4 Sweetener Packets (optional)
- 3g (1 tsp) Extract of Choice (optional)
*I used Maple Extract but Coconut, Caramel, and Almond Extract all work great!
MERINGUE:
- 4 Egg Whites
- 50g Erythritol/Sugar Replacement Sweetener
- 10g (4 tsp) Corn Starch
- 5g (1 tsp) Vanilla Extract
RIDICULOUS BROWNIE BASE:
- 15g (2 Tbs) Flour
- 20g Cocoa Powder
- 12g Protein Powder
- 45g Erythritol/Sugar Replacement Sweetener
- Pinch of Baking Powder
- Pinch of Salt
- 120g Diet Soda
*@lowcalrecipes98 uses 21g of cocoa but I used 20g and it works perfectly for me, check out her IG for this and many other amazing recipes!

Protein Cheesecake
Macros: (1 Slice ) Carbs 17g | Fat 3g | Protein 18g
Calories: (1 Slice) 167
What you need:
8oz Fat Free Cream Cheese
16oz 0% Greek Yogurt
3 Eggs
3 tsp Vanilla Extract
2 tsp Salt
Splash of Lemon Juice
¾ Cup Powdered Stevia (or Granulated Splenda)
¼ Cup Almond (or Cashew) Milk
Crust Optional
6 Full Sheets Graham Crackers
2 Tbsp of 0% Greek Yogurt (to bind)
2-3 Drops of Stevia
Instructions:
1. Start by Preheating Oven to 350 Degrees and spray down pan with nonstick cooking spray.
2. Take 6 Graham Crackers sheets and put them in a bag and crush until fine. Pour into a bowl, and mix in yogurt & stevia and press down to form the crust.
3. Place the crust mixture into the cake pan and press into the pan until the pan is fully covered.
4. Toast in oven for 10 minutes, and take out and let cool.
Drop temp to 335 degrees.
5. Pour your Cream Cheese, Greek Yogurt, Eggs, Vanilla Extract, Lemon Juice, Salt, and Stevia in a mixer or bowl (until smooth - hand mixer/kitchen aid is recommended) and mix on low or medium until fully incorporated. *Don't add the milk yet!
6. Add in almond milk until consistency evens out.
7. Pour in pan, and bake at 335 for 40 minutes. Then turn oven down to 200 degrees for 20 minutes.
8. Take out, let cool and set in the fridge and let it set and cool for 1-2 hours.
9. Enjoy!
Vegan Lemon Cheesecake Cups- Oil Free, Wheat-Free, Refined Sugar Free
1 ½ cups raw cashews (soaked for min. 2 hours)
½- ¾ cup plant milk
3-4 pitted medjool dates
½ tsp lemon zest
2 tsp lemon juice
½ tsp vanilla extract
Pinch of salt
Strawberries to garnish
Nut Crumbs
½ cup nuts
1 date
Combine all ingredients except for the strawberries in a blender. Blend until smooth. Chill in the refrigerator for 1-2hrs. In a food processor combine nuts and dates and process to a course crumb.
Garnish chilled cups with nut crumbs and fresh strawberries.
