How To make Low Cholesterol Quiche
CREPE::
2 cups flour
1/4 teaspoon salt
1 1/2 cups Egg Beaters
3 cups skim milk
4 tablespoons vegetable oil
FILLING::
1/2 cup onion chopped
1/4 teaspoon cayenne pepper
2 cups Egg Beaters
16 ounces plain yogurt
1/4 teaspoon salt
1 cup Mozzarella :
part skim, grated
Crepe: Sift flour and salt together. Add Egg Beaters, a small amount at a time, beating thoroughly. Gradually add milk; mixing until blended. Add oil and beat until smooth. Allow batter to stand for 1 hour before cooking crepes. Cook in a hot skillet.
Filling: Mix Egg Beaters, yogurt, salt and cayenne pepper together. To assemble , use tart pan, pressing crepe into bottom of pan. Place a small amount of onio n and then fill with egg mixture until full. Bake for 15 to 20 minutes at 350 d egrees. Makes 60 small quiches. Recipe from "One Million Recipes CD"

Grab & Go Quiche (Vegan & Low Salt!)
INGREDIENTS
4-5 slices tempeh bacon
1 small bunch green onions, diced
2 tablespoons nutritional yeast
3-4 garlic cloves, minced
3 tablespoons hummus
1 10 ounce package frozen spinach, thawed
1 14 ounce package extra firm tofu, pressed and chopped
no salt seasonings to taste
DIRECTIONS
1.) In a food processor add in tofu, nutritional yeast, hummus, garlic, ground pepper, and no salt seasonings to taste. Blend until smooth.
2.) Preheat oven to 350F.
3.) In a mixing bowl add in tofu mixture, spinach, tempeh bacon, and green onions. Mix until well combined.
4.) Fill muffin cups about halfway with the mixture.
5.) Place in 350F oven for 30-40 minutes or until browned on top.
6.) Serve warm.
