This casserole dish can be also considered a quiche casserole, or a crustless quiche recipe, since this is very similar to a quiche but without the crust!
If you are looking for some breakfast ideas that you can serve regularly to your family, feel free to try this healthy casseroles recipe, it has fresh large eggs, organic spinach leaves, (low fat) shredded mozzarella cheese. You can also add thinly sliced green onions or dried onion if you don't have fresh one. Best serve when hot, you can add sour cream or Picante sauce on top for more flavorings.

Crustless quiche - How to make easy & healthy veggie crustless quiche! (super tasty!)
Hey guys, check out this incredible crustless quiche recipe! ????
Ingredients:
300g spinach (frozen)
250g feta cheese
300g mushrooms
4 eggs
2 courgettes
125g light mozzarella
50ml milk (I’ve used rice milk)
Herbs, salt, powder garlic & pepper
~~????Instructions:
1. Cut the courgettes & mushrooms.
2. In a heated pan with olive oil add the courgettes & mushrooms.
3. Add some salt & pepper and a bit of water.
4. Simmer it for a few minutes. When ready, leave it aside.
5. Whisk 4 eggs in a medium bowl. Grind the feta cheese and add it to the bowl.
6. Add the spinach, milk, the sauteed veggies, half the mozzarella, herbs, salt & pepper and mix.
7. Add the mix into an oven pan. Add the rest of the mozzarella on top.
8. Bake it for 40-50 minutes at 175C/350C.
9. When ready, leave it to cool and cut it.
