Directions:
Everyone loves these delectable crustaceans, but many cooks are squeamish about placing them into boiling water alive, which is the only proper method of preparing them. Frankly, the easiest way to eliminate your guilt is to establish theirs by putting them on trial before they're cooked. The fact is, lobsters are among the most ferocious predators on the sea floor, and you're helping reduce crime in the reefs.
Grasp the lobster behind the head, look it right in its unmistakably guilty eyestalks and say, "Where were you on the night of the 21st?", then flourish a picture of a scallop or a sole and shout, "Perhaps this will refresh that crude neural apparatus you call a memory!" The lobster will squirm noticeably. It may even take a swipe at you with one of its claws. Incorrigible.
Pop it into the pot. Justice has been served, and shortly you and your friends will be, too.
After lobster is added to hot water, wait a while till bright red. Remove lobster from hot water. Bash lobster repeatedly with heavy object. Using fingers and implements pick out lobster chunks and plunge into melted butter.

Today I’m showing you how to cook lobster tails with a recipe that’s easy to prepare, but so big on flavor! I’ve been making this lobster tails recipe since I first started cooking professionally with chef Homaru Cantu (of Chicago’s MOTO fame), back when we worked together at Lake Arrowhead Resort in California. We made this garlic butter lobster tail recipe for New Year’s Eve back in the 1990s and it sold like crazy!
This garlic butter lobster tail recipe uses just a few ingredients. I bought my lobster tails at Costco, and the price was just $50 for 6 tails, as opposed to $50 or more per serving at most California restaurants! Here's what you'll need to make the lobster tails. Note: You can cook this lobster tail on the grill, but it can be just as easily made on a cast iron grill or even a frying pan inside the home.

Easy Garlic Butter Lobster Tails
6 lobster tails
For each two tails:
2 teaspoons chive oil (1 per tail) or your favorite olive oil or grapeseed oil:
1 pinch kosher salt
Fresh cracked pepper
How to Make Lobster Tail Butter Baste:
2 heaping tablespoons butter
1 teaspoon garlic-shallot puree
1/4 cup water, as needed, with 1/2 cup extra on hand
2 tablespoons fresh Italian parsley
1 pinch salt, if desired
Fresh minced chives, as garnish
To prepare this lobster tail with butter, you’ll need an outdoor grill or a cast iron grill pan. Watch the video to see how it’s made!
I recommend serving this with garlic mashed potatoes, filet mignon and creamed spinach!

Ginger Scallion Lobster
Ingredients:
[sauce]
6 oz chicken stock
6 oz coco rico
2 tablespoon mirin
1 teaspoon sesame oil
* 1 tablespoon oyster sauce
1 tablespoon shrimp paste (with soy bean oil)
1 teaspoon chicken bouillon powder
1 teaspoon black pepper
1/2 tablespoon corn starch
6 Lobster tails (cleaned and portioned as desired)
Corn starch (enough to coat)
Frying oil as needed
Kosher salt and white pepper to taste
2 tablespoon butter
1 tablespoon minced garlic
1 tablespoon minced ginger
1 bunch of green onion (Use white part for cooking and the green end for garnish)
1 jalapeños ( cut into rings)
Sweet peppers as desired

Instruction:
1. Prepare oil for frying. Use enough oil to submerge the lobster in and bring it to 400d degrees Fahrenheit (use a large pot so the oil won't over flow)
2. Start by whisking together all the ingredients for the sauce in a small pot. Bring to a simmer over medium high heat and set aside.
3. Coat the lobster in cornstarch. Dust off the excess corn starch and carefully fry for 3 minutes
4. When the lobster is done remove and season with salt and white pepper
5. Next melt the butter in a large pan then add minced garlic, ginger and fry on low until it's fragrant.
6. After that add the green onion bulbs and peppers. Continue to cook until softened
7. Whisk the sauce again and add it to the pan and bring to a simmer
8. Next combine the lobster. Toss to coat in the sauce then plate up and garnish with the green part of the onion
